I’m obsessed with that blackened seasoning. I recently discovered it’s incredible on corn.
I have a goal of having a *good* recipe for every kind of vegetable. So far I have asparagus, potatoes, sweet potatoes, carrots, and watermelon.
And now we have corn! The flavor is out of this world. When the seasoning gets cooked, it’s get sticky and glazes the corn.
What kind of corn to use?
You can use any kind of corn you prefer. Fresh corn, frozen corn, or canned corn all work.
I like using frozen corn because it’s the easiest. With frozen corn, all you have to do is open the bag and dump it in the skillet. It doesn’t go bad. There’s no can opening or draining. Or cutting corn kernels off the cob.
Can you do the blackened seasoning on corn on the cob?
I tried this and it didn’t work. The brown sugar doesn’t get the chance to caramelize like it does when in the skillet.
What kind of skillet to use?
Any kind of skillet works. A non-stick skillet, cast iron skillet, or stainless steel skillet all work.
Substitutions:
- Olive oil – Substitute with melted butter.
- Paprika – You can use smoked paprika.
- Frozen corn – Use whatever kind of corn you have! Frozen corn, fresh corn, and canned corn all work. Make sure to drain the canned corn.
- If you want more than corn – Add red bell pepper.
Can you make this ahead of time?
Yes! You can make this the day before. Store in the fridge overnight. Heat it up in the microwave when you’re ready to serve.

Blackened Corn
Ingredients
- 1 Tablespoon olive oil
- 1 Tablespoon brown sugar
- 1 Tablespoon orange marmalade
- 3/4 teaspoon soy sauce
- 3/4 teaspoon cajun seasoning
- 3/4 teaspoon creole seasoning
- 1/4 teaspoon paprika
- 2 (10 oz) packages frozen corn (or 8 corn on the cobs)
Instructions
- In a skillet over medium high heat, add all of the ingredients.
- Saute for 4-5 minutes, or until the corn is warmed through and the blackened seasoning gets sticky.
