A Mother’s Day appetizer idea: baked Boursin!

Ingredients:
3 Tablespoons flour
1 egg, beaten
1 cup panko breadcrumbs
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/4 teaspoon salt
1 (5.2 oz) package Boursin garlic & herb cheese
olive oil spray (optional)
1/2 cup honey
1/2 baguette, thinly sliced

My favorite rice: coconut lime rice!!! It’s sweet and sticky and flavorful and absolute perfection.

Ingredients:
1 1/2 cups jasmine rice
1 (13.5 oz) can unsweetened full fat coconut milk
1 3/4 cups water
1/3 cup sugar
1 1/2 teaspoons kosher salt
1 lime, zested + juiced

Baked Cajun Salmon (alternative name: baked blackened salmon 🤪)

1 tablespoon cajun seasoning
1 tablespoon creole seasoning
1 teaspoon orange marmalade

Spring appetizer series recipe #4: tomato jam bruschetta!!

Ingredients:
1 1/2 cups cherry tomatoes, cut in half
3 tablespoons sugar
1 lime, juiced
1 teaspoon apple cider vinegar
1 teaspoon garlic powder
1/4 teaspoon salt
6 tomatoes on the vine, core/seeds cut out and diced
1/4 cup fresh basil, chopped
1 Tablespoon olive oil
1/4 teaspoon garlic powder
salt to taste
1 baguette, thinly sliced

2 (10 oz) container Sabra Roasted Red Pepper Hummus
1 shallot, diced (or 1/4 of a red onion)
1 cucumber, diced
1 cup cherry tomatoes, diced
2/3 cup roasted red bell peppers, chopped
15 peppadew peppers, chopped
1/2 cup crumbled feta cheese
1/2 cup chopped fresh parsley

4 Yukon Gold or Butter potatoes, unpeeled and thinly sliced (about 1.5 pounds)
1 1/2 cups shredded gruyere cheese (about 6 ounces)
2/3 cup shredded parmesan cheese (about 3 ounces)
1 (1 oz) packet Lipton onion soup mix
1 teaspoon fresh thyme, taken off the sprigs (or 1/4 teaspoon dried thyme)
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 Tablespoon butter, melted

Easter series recipe #4: honey glazed carrots with basil goat cheese sauce

For the carrots:
2 lbs carrots, peeled + cut in half lengthwise
2 Tablespoons olive oil
Salt
Pepper
4 Tablespoons honey
1 Tablespoon sriracha
1/2 lemon, juiced

For the basil goat cheese sauce (optional – you can skip and serve plain or serve with crumbled goat cheese + basil on top):
2 cups baby arugula
1 cup fresh basil leaves
1/2 cup crumbled goat cheese (about 4 ounces)
3 Tablespoons balsamic vinegar
1 lemon, juiced
1 Tablespoon honey
3 Tablespoons olive oil (or more if your sauce isn’t blending)
3 teaspoons garlic powder
salt
pepper

Ingredients:
1/4 cup lemon juice (about 2 lemons)
3 Tablespoons honey
1 teaspoon dijon mustard
1 shallot, finely chopped (or 1/4 of a red onion)
1 1/2 teaspoons poppy seeds
3 Tablespoons extra virgin olive oil

6-8 cups greens (romaine, baby kale, arugula, or spring mix)
8-10 strawberries, quartered (~1 1/2 cups)
1-2 mini cucumbers, thinly sliced
8-10 slices bacon, cut with scissors into small pieces and cooked in the microwave
1/2 cup pickled onions
1/4 cup crumbled goat cheese
1/4 cup sliced, toasted almonds
