Frozen vodka with lemonade garnished with mint

Whenever people say they’re making burgers, this is what I bring to go with it.

It’s so light and summery.

Everyone asks for the recipe everywhere I bring it.

The inspiration…

My mom has a similar recipe for a frozen lemonade vodka.

Except it took so much more effort.

She freezes simple syrup and lemon juice in ice cube trays. Then blends them with vodka and mint. It’s so good. But it takes so much planning ahead.

But one time when we were making it, I had a thought. What if I use Crystal Light Powder and ice? Instead of frozen simple syrup and lemon juice? It’s the same flavoring and same amount of liquid. But I wouldn’t have to make my own ice cubes.

The result: It worked!!

And my version takes 10 minutes to throw together (instead of multiple days)! Plus it’s low calorie.

What makes this vodka lemonade low calorie?

So there’s no calories in the drink except for the vodka!

I use Crystal Light Powder instead of simple syrup. The rest of the ingredients are mint, ice, and sparkling water.

So it’s like a vodka soda calories wise. But way better and way more flavor.

How to make ahead of time?

Even though this is a frozen drink, you can make this ahead of time.

The secret is one of these insulated gallon Yeti jugs. You can make the frozen lemonade in the morning. Dump it in the jug. And it will still be frozen by the afternoon if you keep the lid on.

This gallon jug will hold 3 batches of this cocktail.

Substitutions

  • Lemon Vodka – You can use regular vodka. The crystal light powder will add enough lemon flavor.
  • Mint – Leave it out. It will still be amazing.
  • Sparkling water – Club soda and Topo Chico both work. If you don’t have either of those you can use regular water.

What to do with leftover mint?

If you get too much mint, put it in the freeze. You can use it to make another batch of this cocktail in the future.
