This cocktail is inspired by our favorite cocktail from the Quirk Hotel in Richmond called the Quirk Spritz! It’s the perfect spring/summer cocktail! It’s light and bubbly and refreshing. If you love bubbles, rosé, and lemon, then you will love this cocktail.

Fun fact: this drink has an extra special place in our hearts because my husband and I had our wedding welcome party at the Quirk Hotel in Charlottesville!

What is a “Spritz”?

It’s typically prosecco, something bitter and soda water.

This spritz has rose for the wine, lemon juice for something bitter, and soda water.

What kind of rose should I use?

Use whatever rose is your favorite because this will be the main flavor of the drink! I love a pinot noir rose in this drink.

The pinker your rose, the more pink the drink will be!

Can you make this ahead of time?

Partially! You can combine everything (rose, lemon juice, vodka, and simple syrup) except the club soda ahead of time. Then add the club soda before guests arrive. That way the club soda doesn’t loose it’s bubbles before people drink it.

Here is my favorite drink dispenser for a batch cocktails. I put my Christmas punch and this drink in there even though it has some bubbles and it’s fine! (I’m not sure if this is recommended by the store though)
