Mediterranean Dip

Mediterranean Dip – layers of hummus, greek yogurt, red onion, cucumbers, tomatoes, peppadew peppers, fresh parsley, and feta.

This dip is like the Mexican 7 layer dip but way lighter. And, in my opinion, better. The hummus with the greek yogurt makes the creamiest base. And the fresh toppings add so much color, flavor, and texture!

Recipe modifications:

You can pretty much leave out anything you don’t like. And add anything you love.

Don’t like onions? Throw them out.
Love cucumbers? Add some more.
Need olives in your life? Add them to the recipe.
If you don’t eat dairy, or if you want to keep it vegan, skip the yogurt/feta and add more hummus.

But I will say the roasted red bell pepper hummus and peppadew peppers give the dish so much flavor. You can find peppadew peppers in the olive bar at your grocery store. Or in a jar near the pickles.

Can you make this Mediterranean Dip ahead?

You can prep all the ingredients ahead. But it’s best to layer it just before serving. The cucumbers will get watery if they sit too long.

What to serve with this dip?

Pita chips, carrot chips, nut thins, or pita bread would all be great dip scoopers.

As for the main dish to go with it – these Greek chicken bowls would make the perfect meal with this dip!

Ingredients

  • 1 (16 oz) container plain 2% Greek Yogurt (or three 5.3 oz containers)
  • 2 (10 oz) container Sabra Roasted Red Pepper Hummus
  • 1 shallot, diced (or 1/4 of a red onion)
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, diced
  • 2/3 cup roasted red bell peppers, chopped
  • 15 peppadew peppers, chopped (found on olive bar in grocery store)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped fresh parsley

For serving:

  • Triscuits, pita chips, whole-grain crackers, carrots chips

Instructions

  • Spread Greek yogurt on the bottom of an 8×8 dish or 9-inich pie dish.
  • Drop spoonfuls of hummus all over the greek yogurt. Gently spread in an even layer.
  • Sprinkle on shallot, cucumbers, roasted red bell peppers, tomatoes, feta cheese, and parsley.
  • Serve with triscuits, pita chips, whole-grain crackers, or carrots chips.
