This BLT is unlike any other BLT you’ve ever had

You know how popcorn smells better than it tastes? The same thing happens with BLTs. They always look so much better than they taste.

And it makes sense. The only ingredient adding lots of flavor is the bacon.

But we’re changing that today.

Two flavor packed substitutions:

  1. The plain thick slices of tomato typical in a BLT recipe are replaced with marinated tomatoes
  2. A schmear of mayo is replaced with pimento cheese.

Marinated tomatoes…

If you’ve never heard of marinated tomatoes, allow me to introduce you!!

Marinating tomatoes brings them to life. It infuses the tomatoes with so much flavor.

The tomatoes marinate in olive oil, balsamic glaze, and herbs. I use balsamic glaze because I want the marinade to be a thick and sticky marinade. Because the tomatoes release a lot of liquid as it sits.

Pimento cheese..

Some people add avocado to a BLT. The creaminess pairs so well in a BLT. But while delicious, avocados don’t add much flavor.

Pimento cheese adds another layer of flavor. And the creaminess pairs so well with the marinated tomatoes.

I use store bought pimento cheese to keep it easy. But homemade would also be delicious.

Substitutions:

  • Bibb lettuce – You can use any kind of lettuce you prefer. I like bibb lettuce because it doesn’t over power the other ingredients. Green leaf lettuce would be a great option if you’re looking for a heartier lettuce.
  • Bacon – If you don’t eat pork, turkey bacon would be a great substitute
  • Looking for more meat – Add some turkey and ham and this turns into one of the best club sandwiches you’ll ever have.
  • Toasted bread – Toasted sourdough would be delicious. Or even a bagel!

What to serve with this BLT recipe?

Keep this meal no cook with some watermelon sticksa fruit salad, or potato chips!

This house salad or a simple side salad would be so good too!

Ingredients

For the marinated tomatoes:

  • 1 1/2 Tablespoons olive oil
  • 1 1/2 Tablespoons balsamic glaze
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 3 heirloom tomatoes, thinly sliced

For the sandwich:

  • 6 slices whole wheat bread
  • 6 Tablespoons pimento cheese (homemade or store bought)
  • 3 pieces bacon, cooked until crispy
  • 3 pieces of bibb lettuce (arugula or green leaf lettuce also work)

Instructions

For the marinated tomatoes:

  • In a medium bowl, whisk together everything except the tomatoes.
  • Add the tomato and toss to coat. Let sit for 30 minutes at room temperature.

For the sandwich:

  • Cook bacon until desired doneness in the microwave.
  • Toast the bread if desired.
  • On one bread piece, spread 2-3 Tablespoons of pimento cheese.
  • Layer the lettuce, marinated tomatoes, and cooked bacon on top. Sandwich the bread together.
