For the marinated tomatoes:
- 1 1/2 Tablespoons olive oil
- 1 1/2 Tablespoons balsamic glaze
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried parsley
- 1/4 teaspoon salt
- 3 heirloom tomatoes, thinly sliced
For the sandwich:
- 6 slices whole wheat bread
- 6 Tablespoons pimento cheese (homemade or store bought)
- 3 pieces bacon, cooked until crispy
- 3 pieces of bibb lettuce (arugula or green leaf lettuce also work)

Cook bacon until desired doneness in the microwave.
Toast the bread if desired.
On one bread piece, spread 2-3 Tablespoons of pimento cheese.
Layer the lettuce, marinated tomatoes, and cooked bacon on top. Sandwich the bread together.
