Seared Scallops with Brussels Sprouts – 7 ingredients and 20 minute prep time make this dish a real super star!

Scallops are quick-cooking when seared. And they are absolutely delectable.
The shredded Brussels sprouts pair perfectly in the lemony-garlicky seasoning.
The addition of smoked apple-wood bacon is just the icing on the cake. It gives the dish a little something special.
What wine to pair with this meal?
A Chardonnay, dry Champagne, Albariño, Riesling or Sauvignon Blanc would all be great pairs!
What to serve with these seared scallops and brussels sprouts?
Lemon parmesan asparagus or this pesto orzo salad would be a great pair!

Seared Scallops with Brussels Sprouts
Ingredients
- 1 lb Sea Scallops
- 1 lb Shredded Brussels Sprouts
- 1 Lemon juiced
- 3 Tablespoons of Olive Oil
- 1/4 Cup Chopped Green Onion
- 2 Smoked Applewood Bacon Strips cooked and chopped
- 3 cloves of chopped garlic
Instructions
- In a large skillet over high heat, cook two tablespoons of olive oil, lemon, garlic, Brussels sprouts, and green onions.
- Once the Brussels Sprouts are nicely browned transfer to a plate and set aside.
- Add 1 Tablespoon of olive oil and place on high heat and sear the Sea Scallops (about 3-4 minutes on each side) (salt and pepper both sides as you like)
- Top the Brussels Sprouts with the Seared Scallops and sprinkle the chopped Applewood Smoked Bacon…..Enjoy

At which point does the lemon come in?
My husband and I really liked this recipe. Simple to make and very good! Our only “problem” was the recipe did not indicate where the lemon should be used or was it just mentioned to be put in the orzo side dish. No big problem-just curious.
