Warning. This recipe is dangerously addicting. It is physically impossible to STOP eating bite by bite by bite. Before you know it, the entire batch will be gone. I speak (type?) from experience.

If you have been reading my blog for a while, then you must know that I have a thing for snack mixes. I have crafted up countless different ways to stuff my face with sweet and salty goodness one piece at a time… and I don’t plan on stopping any time soon.

I know, I know. It’s January and it is supposed to be healthy month. But it is also all things football and fun snacks. So… without further a-do: Pay Day Chex mix. It can be made in the microwave in a matter of minutes and it’s definitely a crowd pleaser.

Just like most of my snack mixes, this one requires no baking at all. That’s right, give your oven (and yourself) a break – it’s time for the microwave to take the show. There are also only 7 ingredients. Yes seven. And you probably have them all in your pantry right now.

You need 1 sauce pan, 1 large bowl, and 7 minutes for this whole recipe. The saucepan is for melting the carmel goodness together and the large bowl is for mixing it all together before, after, and during the microwaving step.

For the chex mix I like to use the “Honey-Nut” flavor because, well, more flavor. Duh.

Easy Microwave Pay Day Chex-Mix

Salty, sweet, sticky, homemade Pay Day Snack Mix. This is the easiest snack mix ever! Done in less than 10 minutes – made in the microwave. Perfect for serving a crowd on football Sunday!

Ingredients:

  • 10 cups corn chex cereal
  • 1 cup roasted, salted peanuts

For the caramel:

  1. 1 cup butter
  2. 1 cup light brown sugar
  3. ¼ cup light corn syrup
  4. ½ teaspoon vanilla extract
  5. ¼ teaspoon baking soda

Directions:

  1. In a large microwave-safe bowl, combine corn cereal and peanuts. Set aside.
  2. In a medium saucepan, melt the butter over medium heat. Add butter and whisk constantly until fully combined and boiling. Remove from heat, whisk in corn syrup, vanilla, and baking soda until completely combined.
  3. Pour over cereal/peanuts and fold mixture with a rubber spatula to even coat.
  4. Transfer bowl to microwave and microwave for 1 minute, remove from microwave and stir. Repeat 2-3 more times. (Microwave for 3 minutes for a slightly softer caramel, and 4 minutes for a slightly crunchier caramel.)
  5. Spread snack mix into a single layer onto a large baking sheet lined with foil. Allow to cool on the pan and break apart large clusters if desired. Cover the snack mix tightly once cooled; it will stay fresh for up to 2 weeks.
