Microwave caramel popcorn that is made in less than 10 minutes!
10 cups air-popped popcorn (I normally use a store-bought bag of popcorn like lightly salted SmartFood)
For the caramel:
1 cup butter
1 cup light brown sugar
¼ cup light corn syrup
½ teaspoon vanilla extract
¼ teaspoon baking soda
Add popcorn to a large microwave-safe bowl. Set aside.

Whisk in corn syrup, vanilla, and baking soda.
Pour over popcorn. Fold with a rubber spatula to evenly coat.
Microwave the popcorn for 1 minute. Remove from microwave and stir. Repeat 3 more times.
Spread snack mix into a single layer onto a large baking sheet lined with foil. Allow to cool on the pan. Break apart large clusters if desired.
Cover the snack mix tightly once cooled.
