Club Sandwich with Chicken – a leveled up classic club sandwich with grilled chicken thighs and pimento cheese!
The inspiration behind this grilled chicken club…
This recipe came to life as a result of multiple obsessions coming together:
Obsession #1: club sandwiches – If a restaurant has one on their menu, then I’m ordering it. Which is almost funny because it’s literally just… a sandwich? So why have I never made them at home?
Obsession #2: grilled chicken thighs – Specifically these grilled chicken thighs. They’re marinated in Italian dressing and montreal steak seasoning. It’s the most flavorful grilled chicken ever.
Obsession #3: pimento cheese – I’ve been putting pimento cheese on everything (example 1, example 2, example 3).
Combining all of those obsessions results in… these grilled chicken club sandwiches!
How it’s made:
Chicken thighs are marinated in Italian dressing and montreal steak seasoning. Grilled to get a nice char. Then topped with pimento cheese on the grill to get it melty. And piled high on a brioche bun with lettuce, tomato, and bacon.
This chicken club sandwich is so juicy, tender and packed with flavor. Possibly even my favorite sandwich ever.
Substitutions:
- Bibb lettuce – You can use any kind of lettuce you prefer. I like bibb lettuce because it doesn’t over power the other ingredients. Green leaf lettuce would be a great option if you’re looking for a heartier lettuce.
- Bacon – If you don’t eat pork, turkey bacon would be a great substitute
- Pimento cheese – Any kind of cheese would work. Swiss cheese would be delicious. You could also spread mayonnaise on the bread instead cheese.
- Grilled chicken thighs – You can do chicken breasts instead of thighs. If you don’t have a grill, roast chicken or rotisserie chicken would work.
- Brioche bun – Toasted bread would be great.

Club Sandwich with Chicken
Ingredients
For the grilled chicken thighs:
- 2 lbs boneless skinless chicken thighs
- 1 cup Italian Dressing (about 1/2 a bottle)
- 3 Tablespoons Montreal Steak Seasoning
- 8 Tablespoons pimento cheese (homemade or store bought)
For the sandwich:
- 4 brioche buns
- 4 pieces bacon, cooked until crispy
- 1 heirloom tomatoes
- 4 pieces of bibb lettuce
Instructions
For the grilled chicken thighs:
- In an airtight container or plastic bag, add the chicken, italian dressing, and montreal steak seasoning. Toss to evenly coat.
- Refrigerate and marinate for at least 30 minutes or up to 2 days. The longer the better.
- When ready to grill, preheat the grill to high.
- Remove the chicken from the marinade and drain off the excess. Grill chicken for 6-7 minutes per side or until the internal temperature is 165 degrees.
- About 1 to 2 minutes before the chicken is finished, spread about 2 tablespoons of pimento cheese on top and cover the grill with the lid. Let the cheese melt and then remove from the grill
For the club sandwiches:
- Top the bottom half of the bun with a pimento cheese chicken thigh, lettuce, tomatoes, and cooked bacon. Sandwich the top of the bun on top.
