Veggie Bagel Sandwich
Veggie Bagel Sandwich – a slightly toasted bagel loaded with tomato cream cheese, tomato slices, diced red onion, capers, and fresh sprouts.
This recipe is inspired by one of the most popular breakfast items at our local farmer’s market. It’s called a “bagels with the works. The line wraps around the corner into the other vendors’ spaces for these bagels! And for a good reason. These bagels are so fresh, delicious and satisfying.
The topping starts with cream cheese, followed by a tomato slice, some diced red onion, capers, fresh basil, and micro-greens. The microgreens are optional and really just for looks. It’s like tiny lettuce. But they can sometimes be hard to find. We get them from our local farmer’s market. You could also do some arugula if you can’t find the microgreens but want something green on top.

I love doing a tomato cream cheese on these bagels. It helps enhance the tomato flavor from the tomato slice. But you could also do plain cream cheese or chive/onion cream cheese. Or even hummus if you are dairy free. Roasted red pepper hummus would delicious!
I also think pickled onions would be great on these bagels if you have them!

Veggie Bagel Sandwich
Ingredients
- 1 bagel sliced and toasted (plain, everything, or any other flavor)
- 2 Tablespoons cream cheese (You could also mix in 1 Tablespoon sun-dried tomato pesto to 8 oz of cream cheese for extra flavor)
- 2 slices tomato
- red onion, chopped (or pickled onions)
- sprouts or arugula
- fresh basil
- capers
Instructions
- Spread cream cheese evenly over bagel and layer with remaining ingredients.
