Finding a knockout appetizer recipe is so hard.

It has to meet all the normal knockout standards (i.e. taste amazing). But it also has to be easy to eat. People have to be able to pop a bite in their mouth without spending more than 5 seconds doing so. Otherwise I’ve noticed appetizers don’t get eaten. People have places to be and people to talk to at parties.

So that means when I do find a great appetizer recipe, it’s a HUGE win.

I’m happy to report this appetizer checks all the boxes we are looking for! It’s so good it’s hard to stop eating it. And it’s so easy to eat (making it even harder to stop eating it).

The guacamole base:

I like my guacamole recipe on the simple side. I do avocados, lime juice, cilantro, and chives.

Chives may sound different. But think red onion. Most people add red onion to guacamole. I prefer a more subtle flavor and texture that blends into the avocado mixture more.

If you don’t have a guacamole mortar and pestle, you can use a meat masher to mash the avocados instead.

The toppings:

The guacamole gets topped with diced green chiles (from the can), crispy bacon, cherry tomatoes, and cotija (or feta) cheese.

The flavor combination sounds like it wouldn’t work. But trust me it does. It’s incredible.

Diced green chiles are kind of like adding a jalapeno. But less spicy and almost melts into the guac.

The bacon is the star of the show though. It adds the best salty crunch.

Can I make this ahead of time?

Yes!

To make the guacamole ahead: store it in an airtight container. For extra freshness, cover the top surface with plastic wrap. The airtight container and the lime juice in the guacamole will help prevent it from browning overnight. I wouldn’t make it more than 1 day ahead of time.

You can also cook the bacon ahead of time and store the crumbles in the refrigerator overnight.

Ingredients

For the guacamole:

  • 6 ripe avocados
  • 1/3 cup fresh chives, chopped
  • 1/2 cup cilantro, roughly chopped
  • 2 limes, juiced
  • Kosher salt

Toppings:

  • 1 (4 oz) can green chiles
  • 1 pint cherry tomatoes, diced
  • 3 Tablespoons crumbled cotija (Or crumbled feta)
  • 4-5 strips of bacon crumbled

For serving:

  • Tortilla Chips

Instructions

For the guacamole:

  • Combine all the guacamole ingredients in a large bowl. Mash with a meat masher until desired consistency. Taste and add more salt if desired.

For the toppings:

  • Top with all the toppings and serve with tortilla chips
