Ricotta is one of those ingredients I only use a little of and then let the rest of the container go bad in the fridge. This zucchini lasagna is one of those examples where I always end up with leftover ricotta.

I do have to say… my favorite and easiest way to use up ricotta is on a frozen pizza. You drop spoonfuls of ricotta all over the frozen pizza before baking. Then bake according to the package instructions. The ricotta gets super warm and melty and creamy in the oven. And 100% takes a frozen pizza to the next level. It’s especially good with on a meat lover’s pizza. But it also works on a frozen vegetable pizza too.
