BLT Bagel
BLT Bagel sandwich – a tasted bagel with marinated tomatoes, crispy bacon, leaf lettuce, and pimento cheese.
This is the most perfect (almost) no-cook summer meal!
It’s light, fresh, and loaded with summer produce. Featuring summer tomatoes in all their glory.
This sandwich has all the components of a classic BLT. But it’s made even better with marinated tomatoes and pimento cheese. It’s the ultimate BLT sandwich!!!
Marinated tomatoes are my favorite way to level up a BLT
BLTs can be a little bland. Marinated tomatoes fix that. It infuses the tomatoes with so much flavor!
To marinate the tomatoes, the tomatoes sit in olive oil, balsamic glaze, and herbs. It doesn’t seem like a lot of liquid to marinade the tomatoes in. But trust me. The tomatoes release liquid as they sit. So you want the marinade to be thick!
Pimento cheese is my other secret to leveling up a BLT
It adds another layer of flavor. And the creaminess pairs so well with the infused tomatoes.
I use store bought pimento cheese to keep it easy. But homemade would be delicious.
I like to use a bagel for these BLTs. Because I carve out a little of the top of the bagel. So you have a moat to put the pimento cheese in. The scooped out bread creates a designated space for the pimento cheese. It prevents the pimento cheese from all spilling out of the sandwich when you bite into it.
You can use any kind of bread…
I use a bagel but you can use regular bread if want! Toasted sourdough would be delicious. Or even an everything bagel!
Other recipe modifications:
Add some turkey and ham and this turns into one of the best club sandwiches you’ll ever have.
Turkey bacon works great for these too!
What to serve with these BLT Bagels?
Keep this meal no cook with some watermelon sticks, a fruit salad, or potato chips!
Homemade baked french fries are great if you want to turn on the oven.
This house salad or a simple side salad would be so good too!

BLT Bagel
Ingredients
For the marinated tomatoes:
- 1 1/2 Tablespoons olive oil
- 1 1/2 Tablespoons balsamic glaze
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried parsley
- 1/4 teaspoon salt
- 3 tomatoes on the vine or heirloom tomatoes, thinly sliced
For the sandwich:
- 2 bagels (or 4 slices sourdough bread)
- 4 Tablespoons pimento cheese (homemade or store bought)
- 4 pieces bacon, cooked until crispy
- 2 pieces of leaf lettuce or a couple handfuls of arugula
Instructions
For the marinated tomatoes:
- In a medium bowl, whisk together everything except the tomatoes.
- Add the tomato and toss to coat. Let sit for 30 minutes at room temperature.
For the sandwich:
- Cook bacon until desired doneness in the microwave.
- On the top bagel pieces, scoop out the inside of the bagel so you have a moat carved out for the pimento cheese to sit in.
- Toast the bagel if desired.
- On the top bagel piece, spread 2-3 Tablespoons of pimento cheese into the carved out portion.
- On the bottom half of the bagel, layer 1 piece of leaf lettuce, 2 pieces of bacon (broken in half), and 4 marinated tomatoes each (you want a lot). Sandwich the top bagel together.
