Here’s another easy recipe for you to make on Sunday prep day to enjoy for the week ahead… and it’s definitely one of our favorites!

I love to get creative in the kitchen… especially when it involves healthy wholesome ingredients like those in today’s recipes. Getting creative is one of my secrets to successfully eating healthy on a day-to-day basis. I could easily just have a dry piece of toast every morning and call it breakfast, with little to no effort whatsoever. But to be honest, it’s not that much harder to whip up a flavorful, healthy recipe either.

These energy balls are one example of a super easy, super healthy, super flavorful recipe that we make ALL the time. They are the perfect grab-and-go breakfast/afternoon snack/after dinner treat and the whole family loves them.

With every bite there’s a crunch from the almonds and pumpkin seeds, a little tartness from the dried cherries, and a little sweetness from the mini chocolate chips, maple syrup and coconut.

I buy the almonds, dried cherries, dates, maple syrup, and hemp seeds from Costco. Because, A) We make a ton of the balls, so buying from Costco is a by far a better deal economic wise, and B) Costco has the best dried fruit – seriously! They are better than any other dried fruit I have ever bought from the grocery store. The cherries cherries keep their flavor and color for the longest time!

Almond Energy Balls

The prep time is about 10 minutes from start to finish and the directions could be any simpler… add the first half of the ingredient to the blender, then the second half, scoop out the sticky mixture into balls and that’s it! You can either refrigerate the balls or keep them at room temperature. I like them either way, but during the summer I am more likely to stick them in the refrigerator because when chilled – they are the perfect snack after a long walk in the hot summer sun.

Chocolate Almond Balls

These energy balls are healthy, yet satisfying, and naturally gluten free, made from good-for-you ingredients like almonds, pumpkin seeds, dates, and dried cherries.

Servings: 11 energy balls

Ingredients

  • 1 cup sliced almonds
  • 8 dates pitted
  • 1/4 cup dried cherries
  • 2 tablespoons unsweetened coconut flakes
  • 1 tablespoons hemp seeds
  • 2 teaspoons maple syrup
  • 1/4 cup mini chocolate chips
  • 2 tablespoons pumpkin seeds
  • 1 tablespoons water

Instructions

  • Add all ingredients except chocolate chips, pumpkin seeds, and water to a blender.
  • Pulse 15-20 times, until the dates have been broken down and the mixture is coarsely chopped. Scrape sides if necessary.
  • Add chocolate chips, pumpkin seeds, and water and pulse 3-5 more times, until all ingredients are incorporated.
  • Shape into balls using a tablespoon scooper.
  • Store in an air tight container and refrigerate. Keeps up to 2 weeks
