This recipe is for all the busy mom’s out there. Or all the impatient cooks out there. (Me, yeah that’s me.) I don’t think I have ever tasted so much flavor in comfort in so little ingredients in my life. Seriously!! It’s SO good. This skillet is packed full of all the flavors you might find in a stuffed pepper – hearty ground beef, caramelized onions, comforting tomato flavors, and so. much. cheese! (plus the peppers!). There is only one thing different about this skillet – it is SO much easier to make than stuffed pepper and you only have to dirty the one dish used to make the skillet.

The inspiration for this recipe came from an urge to create a super quick and easy dinner for PICKY kids (like the kids I babysit. 🙂 ). Sometimes I forget how hard it is to be a mom – I mean seriously, the cleaning, the cooking, the taxi-ing, the helping with homework, the monitoring – do mom’s ever take a break?? And then you a picky eater on top of all that and you’ve got yourself quite the handful.

This skillet is super quick, super simple, super easy, and SUPER delicious. In fact, it’s so easy you could even have your kids help you make it! Opening the cans, stirring the onions, etc. Did you know that when your kids are involved in the cooking process of new foods, they are more likely to try it? Yeah, I know. I may not be a mom, but I certainly have a few tricks up my sleeve. 😉

This recipe calls for cooked brown rice, which could throw a some people for a loop, but the reason it calls for cooked brown rice is because I hardly ever make my own anymore. I found this precooked frozen brown rice from Trader Joe’s and I love it x1000!! It seriously takes just like the rice that would come out of a rice cooker in 3 minutes!

If you don’t have a Trade Joe’s near you, I have also seen frozen brown rice in the organic section of my local grocery store and at Whole Foods. If you can’t find the rice, you can always start with the rice and let it cook while you make the skillet because the rice is that last thing to go in.

8-Ingredient Stuffed Pepper Skillet

Only 8-ingredients in this quick and easy one-pot skillet dinner will feed an entire family in about 15 minutes no problem!  This lazy stuffed peppers recipe is plate-lickin’ good and will satisfy your comfort food hunger big time!

Ingredients:

1 pound ground beef
2 green bell peppers, diced
1 onion, chopped
1 (14.5 ounce) can diced tomatoes
1 (10.75 ounce) can condensed tomato soup
2 teaspoons Worcestershire sauce
1 cup cooked rice
1 cup shredded Cheddar cheese

Directions:

  1. Place a large skillet with a over medium-high heat. When skillet is hot, add ground beef and cook 5–7 minutes, breaking into small pieces as it browns.
  2. Add onions and bell peppers in with beef; stir to combine. Once the peppers have started to soften and the onions are translucent, carefully drain excess grease from skillet. Season with salt and pepper.
  3. Return to stove reducing heat to medium. Stir in diced tomatoes with juice, tomato soup, Worcestershire sauce, and cooked brown rice. If the mixture is too thick, add up to 1 cup of water, until mixture reaches desired consistency.
  4. Sprinkle with shredded cheddar cheese and replace the lid. Cook until cheese is melted. Serve immediately. Enjoy!
