If you have ever made those classic Hawaiian Roll ham and cheese sliders with swiss cheese, poppy seed dijon mustard sauce, worcestershire sauce, and a generous amount of melted butter brushed over the top, you already know how magical a pan of Hawaiian rolls can be.

But I think we are seriously sleeping on cheeseburger sliders.

These Hawaiian Roll sliders have everything I want in a cheeseburger: ground beef, melty cheese, dill pickles, and thinly sliced onion. But instead of standing over the stove flipping a dozen individual burgers, you make the whole thing in one pan. Slice, assemble, bake, and suddenly you have dinner for the whole family.

Why I love these hawaiian roll sliders

There is something about a cheeseburger that just makes everyone happy, and these sliders are such an easy way to turn that feeling into a meal that feeds a crowd.

You start with Hawaiian rolls, cut the whole package in half horizontally so you have one big sheet of tops and one big sheet of bottoms. Then you layer everything right into the pan: seasoned ground beef, pimento cheese, American cheese (cheddar cheese would be delicious too if you’re not into the fake cheese!), pickles, and thinly sliced onion.

Then the whole thing goes into the oven until the cheese is gloriously melted and the rolls are warm and toasty.

These are technically an appetizer in my cookbook, but I make them for dinner all the time. They are great for whenever you need something easy that everyone can eat together.

Some tips:

Pimento cheese… Trust me!! I mix pimento cheese into the ground beef and it melts into the beef and makes the whole thing incredibly creamy and cheesy. You could absolutely leave it out if it isn’t your thing. But sometimes I feel like 1 slice of cheese doesn’t disperse the cheesyness into each bite.

Onion… I like it sliced very thin, ideally with a mandolin if you have one. That way it softens while the sliders bake instead of leaving you with thick crunchy pieces of onion.

Cheese… I used American cheese because it gives the perfect cheeseburger melt and gives you that classic cheeseburger flavor. But cheddar cheese would be great here, too. You could even use a combination if you wanted to get a little wild.

Don’t skip the melted butter on top!! There’s so much flavor in these sliders so you don’t need a complicated sauce like you use for the classic baked ham and Swiss sliders. A brush of melted butter is all these need.

Use a serrated knife to cut the finished sliders… the serrated part of the knife helps give some traction to make it all the way through the sliders instead of having all the toppings bust out the sides when you try to cut it.

Make them your own

This is a very forgiving sliders recipe, so don’t feel like you have to follow it exactly.

Want bacon? Add bacon.

Want sauteed onions or caramelized onions instead of thinly sliced onions? Do it.

Want to add a little burger sauce? Absolutely.

Want to use cheddar instead of American? Go for it.

You could even make half the pan with pickles and onions and leave the other half plain if you have kids who prefer their cheeseburgers very simple.

That is another reason I love making these for my family. Everyone is technically eating the same dinner, but you can customize different sections of the pan without making four completely different meals.

And if you’re serving these at a party, you can put out ketchup, mustard, extra pickles, or your favorite burger sauce for dipping.

Ingredients

  • 2 (12-ounce) packs Hawaiian rolls, cut in half
  • 2 pounds ground beef
  • 1 (1-ounce) packet Lipton French Onion Soup Mix seasoning
  • 2/3 cup pimento cheese (about 6-ounces, or more depending on your preference!)
  • 12 slices American cheese (or your favorite cheese)
  • 48 dill pickle slices about one 16-ounce jar
  • 1/2 white onion, very thinly sliced (with a mandolin if you have one)
  • 1 Tablespoon unsalted butter, melted

Instructions

  • Preheat the oven to 350 degrees.
  • Place the bottom half of the buns on a baking sheet.
  • In a large skillet over medium high heat, add the ground beef and French Onion Soup Mix.
  • Cook for 7 to 9 minutes, breaking up the beef with a spatula or meat masher, until the beef is browned and no longer pink.
  • Turn off the heat and drain the ground beef fat from the skillet.
  • To the ground beef in the skillet, add the pimento cheese. Stir until the pimento cheese is melted and combined.
  • Spread half of the ground beef mixture over each of the bottom buns.
  • Top the beef mixture with layers of cheese slices, pickles, and sliced onions.
  • Place the top of the buns, cut-side down, over the burgers.
  • Brush the top of the buns with melted butter.
  • Bake for 15 to 20 minutes, or until the top and bottom of the buns are toasted. Check the sliders after 10 minutes to make sure the buns aren’t browning too quickly.
  • Remove from the oven, slice into individual sliders.
  • Serve immediately and enjoy!
