Easy Almond Buttermilk Caramel Sauce

This caramel sauce recipe is going to change your life. OK, maybe that is a bit of an exaggeration, but I can assure you it’s going to change your breakfast.

Everyone knows that caramel goes with ice cream, cheesecakes, quick breads, and sweets of that nature – but serve it with waffles and every type of pancake and your breakfast game will be forever changed.

So this caramel was actually my first experience with homemade caramel… I made it with almond milk turned into buttermilk.

I know that may sound a little funky, but I hardly ever actually buy buttermilk because I always end up wasting half the bottle when I do. However, sometimes all I have on hand is almond milk, and even though the grocery store is not a far drive, the thought of running to the store just for some milk/buttermilk is pretty much dreadful. SO I’ve made buttermilk out of almond milk before and it was was awesome. You just need almond milk and apple cider vinegar. It’s as simple as that, AND I pretty much always have both of those ingredients on hand.

It’s not necessarily the classic/traditional way to make caramel, but just trust me. Here on the blog we are all about finding the best ways to make our favorite foods, and this caramel is seriously awesome in all kinds of ways. It could beat out any other homemade caramel any day.

If you haven’t made caramel sauce before, don’t be scared. It really is easy, you just have to pay close attention to the caramel. With a little tender love and care, you can create the most amazing Caramel Sauce.

This recipe makes about two cups. It will keep in the fridge for about a month…ours never lasts that long:) So what do we do with it?

It’s great drizzled over ice cream, cookies, brownies cake, pie, etc. I think I would eat anything that had this salted caramel sauce drizzled all over it. We also use it to make frostings or glazes on quick breads. For an afternoon snack, I like to dip my apple slices into a bowl of caramel. And my most favorite of all – drizzled over crepes, french toast, pancakes and waffles 🙂

Everyone needs this Salted Caramel Sauce recipe. It can be used for so many things. It’s a keeper for sure!

Easy Almond Buttermilk Caramel Sauce

The most delicious homemade caramel made with almond “buttermilk”. Perfectly rich, sweet, creamy, and out of this world delicious.  Perfect for ice cream sundaes, quick breads, pancakes, waffles and more!

Ingredients:

3/4 cup almond milk (Such as Almond Breeze Hint of Honey Vanilla Almond Milk)
3/4 teaspoon apple cider vinegar
1 1/2 cups sugar
1/2 cup (1 stick) unsalted butter
2 Tablespoons light corn syrup
1 teaspoon baking soda
1 teaspoon vanilla

Directions:

In a small bowl, mix almond milk and apple cider vinegar together. Set aside.
In a large pot melt the butter over medium high heat. It’s really important to use a large pot so that the caramel doesn’t boil over onto your stove.
Add buttermilk mixture, sugar, corn syrup, baking soda, and vanilla to the pot. Bring to a boil and reduce heat to medium-low. Stir very frequently, for 8-9 minutes. You want the mixture to be slightly bubbling the whole time.
Store in an air-tight container in the refrigerator for up to one month.
