Easy 15 Minute Roasted Sweet Potatoes
This is the easiest (15 minutes and done) and most delicious way we have found to enjoy a sweet potato!
Take a whole sweet potato and pierce it with a fork a few times. Then, you just place it in the microwave on medium-high for 6-7 minutes (depending on how big your sweet potato is). It is helpful to turn your sweet potato about every 2 minutes.
Once the potato has been cooked in the microwave you cut the potato in half. Then, without cutting all the way through on the ends you cut each half into squares. By leaving the ends not cut all the way through you allow for it to stay together in the original shape.
Take a few very thin slices of butter and put in between some of the squares. Season with salt and pepper and then sprinkle Parmesan on top.
Broil the sweet potatoes on medium-high for 6-12 minutes (depending on how crispy you like yours). I like mine crispy but you have to watch them.
Garnish with chives and a dollop of sour cream and you have the best-easiest sweet potato ever!
This makes for a great side or for a great vegetarian lunch. I love sweet potatoes but I don’t like how long they take to cook…..so here is the solution. And it is really delicious this way. Eat the skin and all – that where all the vitamins are! My son who probably wouldn’t just sit down and eat a sweet potato loves them this way!

Thank you!! Just what I was looking for! Easy and fast 🙂
Unsure what ” broil ” means – do you put them under the grill or bake in an oven? I’m in the Uk and broil isn’t a word I have heard before.

Broil is an oven setting where the oven is heated by the top burners only. Hope that helps 🙂
These were awesome!!! I am thrilled to not have to wait forever and both my girls (4 yrs and 11 months) devoured them!

Yay! So happy to hear that. And I totally know how you feel… sweet potatoes are so good but they take soooo long to cook!
Great recipe! Would it work without the microwave? I don’t have one…

Yes! It would just take a little longer… try baking the potato for 45 minutes at 425 degrees and then cut the potato oven and roast it. 🙂
These are amazing, what a great idea! My 4-year-old loves sweet potatoes and I struggle with ways to make them just a little different. Will definitely be making these!
