Easy 15 Minute Roasted Sweet Potatoes

This is the easiest (15 minutes and done) and most delicious way we have found to enjoy a sweet potato!

Take a whole sweet potato and pierce it with a fork a few times.  Then, you just place it in the microwave on medium-high for 6-7 minutes (depending on how big your sweet potato is).  It is helpful to turn your sweet potato about every 2 minutes.

Once the potato has been cooked in the microwave you cut the potato in half.  Then, without cutting all the way through on the ends you cut each half into squares.  By leaving the ends not cut all the way through you allow for it to stay together in the original shape.

Take a few very thin slices of butter and put in between some of the squares.  Season with salt and pepper and then sprinkle Parmesan on top.

Broil the sweet potatoes on medium-high for 6-12 minutes (depending on how crispy you like yours).  I like mine crispy but you have to watch them.

Garnish with chives and a dollop of sour cream and you have the best-easiest sweet potato ever!

This makes for a great side or for a great vegetarian lunch.  I love sweet potatoes but I don’t like how long they take to cook…..so here is the solution.  And it is really delicious this way.  Eat the skin and all – that where all the vitamins are!  My son who probably wouldn’t just sit down and eat a sweet potato loves them this way!

Sweet Potato
Butter
Pinch of Salt
Pinch of Pepper
Pinch of Chives
Dollop of Sour Cream
Pinch of Parmesan Cheese (optional topper at the end just to make it a little more special and delicious!)
