Sheet Pan Sausage and Vegetables
Sheet Pan Sausage and Vegetables – Everything goes on one sheet pan, the honey garlic sauce does most of the work, and the oven handles the rest. The sausage gets a little crispy and the veggies soften and caramelize. It’s simple, flexible, and exactly the kind of dinner I lean on when I need something solid without overthinking it

There’s something about a good sheet pan dinner that just feels like a reset button. After weekends full of takeout, snacks, or honestly just a little too much fun food, I always start craving meals with lots of veggies, a good hit of protein, and minimal effort. Not sad diet food. Just something fresh, cozy, and actually satisfying.
This Sheet Pan Sausage and Vegetables recipe has become one of my favorite re-entry dinners lately because it checks every box: easy, flavorful, filling, and somehow still feels comforting. The smoked sausage gets caramelized and golden, the potatoes get crispy around the edges, and the honey garlic sauce ties the whole thing together in the best way.
It’s the kind of easy dinner where you throw everything onto a baking sheet, roast it until crispy and delicious, and suddenly everyone in the family is happily eating broccoli.
Why You’ll Love This Recipe
- Everything cooks on one sheet pan
- Packed with colorful veggies
- Minimal cleanup thanks to parchment paper
- Sweet and savory honey garlic flavor
- Easy to customize with different vegetables or protein
- Great for busy weeknights
- Makes amazing leftovers
This is one of those recipes that feels healthy without trying too hard. Which is exactly my favorite kind of meal.
Tips for the Best Sheet Pan Sausage and Vegetables
The key to a really good sheet pan sausage dinner is giving everything enough room to roast instead of steam. I use an extra large baking sheet so the vegetables can get perfectly roasted and crispy instead of soft and crowded.
I also highly recommend lining the pan with parchment paper because the honey garlic sauce gets sticky in the best way.
A few other tips:
- Cut the potatoes small so they cook evenly
- Toss everything really well with olive oil
- Spread the vegetables into an even layer
- Roast at a high temperature for maximum caramelization

The Best Vegetables for Sheet Pan Dinners
One of my favorite things about this recipe is how flexible it is. You can clean out your fridge and use almost any vegetables you have.
Some favorites:
- Broccoli
- Brussels sprouts
- Bell peppers
- Green beans
- Cauliflower
- Red onion
- Zucchini
I especially love the combination of broccoli and sweet potato because the sweet and savory flavors work so well together.
Make This Sheet Pan Sausage and Vegetables More Filling
If you want to bulk this up a little more, it’s so good:
- Served over rice
- With garlic bread
- Alongside a simple salad
- Tossed with pasta
- With quinoa for extra protein
You can also adjust the ratio of potatoes to vegetables depending on your family. I usually go heavier on the veggies, but if you have little kids, extra potatoes are never a bad idea.
Can I Use Chicken Sausage?
Absolutely. This recipe works great with chicken sausage if you want something a little lighter. I personally love using smoked sausage because it adds so much flavor to the vegetables while everything roasts together, but both are delicious.
Some of My Other Favorite Reset Meals:
Some of my favorite re-entry meals are chicken vegetable soup (it makes a ton, so I freeze the extra portions for lunches), kale chicken caesar salad (I posted this a couple weeks ago and it’s such a good one), and dill pickle chicken salad (love this for an easy protein and flavor-packed lunch meal prep)
