This butter shrimp scampi has become one of my family’s favorite dinners!!! We make it for Christmas, Father’s day, Easter, and it’s more often than not someone’s birthday dinner request.

It’s easy enough for a weeknight, impressive enough for guests, and packed with bright lemon flavor from plenty of fresh lemon juice and zest.

Whether you serve it over pasta, spoon it onto creamy risotto, or eat it straight from the pan while standing at the stove (no judgment), this garlic butter shrimp recipe is one you’ll come back to again and again.

Shrimp Scampi Over Pasta vs. Risotto

I know shrimp scampi pasta is a classic for a reason.

The buttery wine sauce coats every noodle and creates an incredibly satisfying dinner. If you’re serving this over pasta, don’t forget a generous handful of parmesan cheese to help the sauce cling to the noodles.

But hear me out.

If you want to take this recipe up a level, serve it with risotto!! Risotto already brings so much flavor and creaminess to the table. Instead of acting as a blank canvas, it becomes part of the dish. Every bite gets rich, creamy risotto paired with bright, lemony garlic butter shrimp.

That said, if you’ve got pasta in the pantry and no desire to make risotto, go for it. There is plenty of extra sauce in the pan to coat a pound of pasta beautifully.

The Secret to the Best Garlic Butter Shrimp

Most shrimp scampi recipes rely on a simple combination of garlic, butter, lemon, and wine.

This version adds a few extra ingredients that make the sauce absolutely amazing:

  • Butter
  • Fresh lemon juice
  • Lemon zest
  • Wine
  • Garlic powder
  • Fresh parsley
  • Worcestershire sauce

The Worcestershire sauce doesn’t make the dish taste like Worcestershire sauce. It just adds a subtle savory depth that makes people ask, “What is that?”

Combined with all that fresh lemon juice and zest, the result is a bright, flavorful sauce that somehow tastes both rich and fresh at the same time.

Optional But Delicious: Crispy Breadcrumb Topping

There is a buttery panko breadcrumb topping in this recipe, and it’s delicious. The breadcrumbs simply add a little crunch and texture that takes it over the top.

But if you’re trying to get dinner on the table quickly or just don’t have the effort, you can absolutely skip it.

I’ve made this both ways many times, and the shrimp scampi shrimp is incredible without it.

Some tips!!!

  • If you’re trying to thaw the shrimp quickly, put them in a big bowl and add some kinda warm/room temperature water. Change out the water a couple times every 5-10 minutes. The shrimp will be defrosted before the oven preheats!
  • Don’t overcook the shrimp! The rule is U shape = uncooked, C shape = cooked, and O shape = overcooked
  • Save extra sauce for drizzling over risotto or pasta.
  • I’ve made this recipe more times than I can count, and honestly, I rarely measure anything anymore. The sauce is incredibly forgiving, which makes it one of those recipes you can throw together without stressing over exact measurements.

Ingredients

For the shrimp sauce:

  • 8 Tablespoons 1 stick unsalted butter, melted
  • 1/4 cup dry white wine
  • 1/4 cup finely chopped fresh parsley leaves
  • 2 lemons zested + juiced
  • 3 teaspoons Worcestershire sauce
  • 2 teaspoons garlic powder
  • 2 teaspoons kosher salt
  • 1 teaspoon dried rosemary

For the shrimp:

  • 2 pounds jumbo shrimp deveined, with shells and tails off (12 to 15 shrimp per pound)

For the crispy topping:

  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan
  • 4 Tablespoons butter melted

Instructions

  • Preheat the oven to 450 degrees.
  • In a medium bowl, mix together all of the shrimp sauce ingredients.
  • Add the shrimp to a 9×13-inch baking dish. Pour the shrimp sauce over the shrimp and toss to coat evenly. Spread the shrimp into a single layer. Make sure the butter only comes up halfway and the tops of the shrimp are exposed. If the butter covering the shrimp it will make the panko topping soggy instead of crispy.
  • In a small bowl, combine the crispy topping ingredients and sprinkle evenly over the shrimp.
  • Bake for 10-15 minutes, or until the shrimp are cooked through. If the breadcrumbs aren’t golden brown, broil for the last 5 minutes.
