I know what you’re thinking: a salad? For dinner? With kids and a husband??

Stay with me, because this is not a sad little side salad pretending to be dinner. This honey mustard chicken salad is peak summer dinner. It’s crunchy, sweet, fresh, filling, and topped with grilled honey mustard glazed chicken that I would happily eat all by itself.

This is exactly the kind of dinner I want when it’s hot outside, I don’t want anything heavy, I’ve hit my limit on burgers, I don’t want to turn on the oven.

We’ve made this salad twice in one week before, and no one complained. Which is about as strong of an endorsement as a dinner salad recipe can get.

The real star here is the honey mustard dressing because we’re making ONE sauce and putting it to work three different ways: as a marinade for the chicken thighs, a sticky glaze while they grill, and finally as the dressing for the whole salad.

Why You’ll Love This Honey Mustard Chicken Salad

There are a lot of reasons this has become one of my favorite warm-weather dinners, but mostly it just checks all the boxes.

  • One sauce does almost everything. The honey mustard mixture becomes the marinade, glaze, AND salad dressing.
  • It actually fills you up. Between the grilled chicken, crispy bacon, creamy avocado, and all those crunchy vegetables, this is a real knockout dinner.
  • You can prep most of it ahead. Chop the vegetables and marinate the chicken earlier in the day, then grill and toss everything together when you’re ready to eat.
  • It’s easy to customize. Leave something out, add something you love, or put all the toppings in little bowls and let everyone build their own.
  • It’s ridiculously delicious. Sweet honey, tangy dijon mustard, smoky grilled chicken, salty bacon, creamy avocado, crunchy vegetables. There is a LOT going on here in the best possible way.

The Honey Mustard Dressing Does Triple Duty

This is my favorite part of the whole recipe.

I wanted the chicken to have that sticky, slightly caramelized honey mustard glaze you get when honey hits a hot grill. But I also wanted a pourable dressing that was tangy and flavorful without being super heavy or oily.

And I did not want to make two different sauces.

So we don’t!

First, whisk together the honey and dijon mustard with the rest of the marinade ingredients. Some goes onto the chicken thighs to marinate, and you’ll set a little aside to brush over the chicken while it grills.

Then take the remaining mixture, add olive oil and vinegar, whisk together again, and suddenly you have the most delicious honey mustard dressing.

One mixture. Three jobs. We love an overachiever.

Important: Just make sure you separate the portions you’ll use for the glaze and dressing before adding the raw chicken to the marinade.

My Trick for a Really Good Chopped Salad

If you want your homemade salad to taste more like the giant chopped salad you order at a restaurant, here’s my trick:

Chop everything roughly the same size.

Don’t just halve the cherry tomatoes. Dice them. Dice the cucumber into similarly sized pieces. Finely chop the red onion. Chop the chicken and avocado into bite-sized pieces. Crumble the bacon so you get a little in every forkful.

It sounds like such a small thing, but it completely changes the eating experience. Instead of chasing one giant cucumber slice around the bowl, every bite gets a little bit of everything.

And that’s exactly what you want here: crunchy lettuce, juicy chicken, creamy avocado, smoky bacon, tangy red onion, and that sweet honey mustard dressing all together.

Want to Stretch It for More People?

Add carbs. This is almost always my answer.

Cooked orzo is SO good tossed right into this salad and turns it into an even heartier dinner. You could also serve the salad with crusty bread, garlic bread, or roasted potatoes.

And if you’re feeding people with very strong opinions about salad, serve everything deconstructed. Put out the chicken, lettuce, vegetables, avocado, bacon, and dressing separately and let everyone make their own plate.

Suddenly you’re not serving salad for dinner. You’re serving a build your own dinner situation.

This is an easy summer dinner made with grilled chicken, bacon, avocado, fresh veggies, and a homemade honey mustard dressing that also doubles as the chicken marinade.

Ingredients

For the Honey Mustard Sauce (makes marinade, glaze, and dressing):

  • 2/3 cup Dijon mustard
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 teaspoons Famous Dave’s Steak and Burger Seasoning or salt + garlic powder
  • 1 teaspoon garlic powder

For the grilled chicken:

  • 2 lbs boneless skinless chicken thighs

For the dressing:

  • 1/2 cup reserved honey mustard sauce from recipe above
  • 1/4 cup olive oil
  • 3 Tablespoons red or white wine vinegar

For the salad:

  • 2 (5 oz) containers spring mix
  • 4 mini cucumbers, diced
  • 2 pint containers cherry tomatoes, diced
  • 2/3 cup crumbled feta
  • 1 bunch green onions, thinly sliced
  • 2 avocados, diced
  • 2/3 cup Corn kernels (fresh, frozen and thawed, or canned)

Instructions

Make the Honey Mustard Sauce:

  • In a small bowl or measuring cup, whisk together all of the honey mustard sauce ingredients

Marinate the Chicken:

  • In a bowl or container, add the chicken thighs and pour 1/2 cup sauce over the chicken. You can let it marinate for 30 minutes (or longer) if you have time. If not, just proceed to the next step!

Make the Dressing:

  • In a separate bowl, take another 1/2 cup of the prepared honey mustard sauce and whisk in 1/4 cup olive oil + 3 Tablespoons vinegar.

Grill the Chicken:

  • Preheat the grill to 400 degrees.
  • Place the chicken on the grill and grill for 3-4 minutes. Flip, brush with the remaining reserved honey mustard sauce, and grill for 3-4 minutes more.
  • Flip and brush the other side with sauce. Grill until the sauce has caramelized and the internal temperature is 165 degrees, about 1-2 minutes.
  • Let rest, then dice into cubes.

Assemble the Salad:

  • In a large salad bowl, add all of the salad ingredients.Top salad with chicken, drizzle with dressing, and toss.
