Steak Quesadilla Recipe

A quesadilla with steak, fajita veggies, and extra cheese with a side of chipotle sour cream for dipping

Ingredients

  • 1 green bell pepper, thinly sliced & cut in half
  • 1 red onion, thinly sliced
  • 1 (1 lb) package Trader Joe’s shaved beef
  • 2 Tablespoons Trader Joe’s chili lime seasoning (or taco seasoning)
  • 1 cup sour cream
  • 1/2 cup chipotle salsa or chipotle vinaigrette
  • 4 flour tortillas (I like the Trader Joe's handmade flour tortillas)
  • 2 cups shredded Monterey Jack cheese, about one 8 ounce package (or more depending on your preference)

Instructions

For the pepper & beef:

  • Preheat oven to broil.
  • Add the bell peppers, onions, and shaved beef to a sheet pan. Separate the beef into thinner pieces.
  • Season generously with chili lime seasoning.
  • Broil for 7-8 minutes, or until the beef looks browned and crispy on top.

For the creamy chipotle sauce:

  • In a medium bowl, combine the sour cream and chipotle salsa. Set aside.

For the quesadilla:

  • Heat a large skillet over medium heat. Place the tortilla in the skillet and add 1/2 cup cheese to one side of the tortilla. Top the cheese with beef/peppers/onions. Top with a little more cheese. Fold the bare side of tortilla onto the meat & cheese.
  • Cook for 3-4 minutes per side, or until the cheese has melted and the tortilla is golden brown.
  • Slice into thirds and serve with chipotle sour cream or keep warm in an oven at 250 degrees if needed.
