Seared Scallops with Brussels Sprouts

These succulent and juicy seared scallops are a perfect addition to your favorite healthy dinners!  7 ingredients and 20 minute prep time make this dish a real super star!

Ingredients

  • 1 lb Sea Scallops
  • 1 lb Shredded Brussels Sprouts
  • 1 Lemon juiced
  • 3 Tablespoons of Olive Oil
  • 1/4 Cup Chopped Green Onion
  • 2 Smoked Applewood Bacon Strips cooked and chopped
  • 3 cloves of chopped garlic

Instructions

  • In a large skillet over high heat, cook two tablespoons of olive oil, lemon, garlic, Brussels sprouts, and green onions.
  • Once the Brussels Sprouts are nicely browned transfer to a plate and set aside.
  • Add 1 Tablespoon of olive oil and place on high heat and sear the Sea Scallops (about 3-4 minutes on each side) (salt and pepper both sides as you like)
  • Top the Brussels Sprouts with the Seared Scallops and sprinkle the chopped Applewood Smoked Bacon.....Enjoy
