Ingredients

For the salsa:

  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can black-eyed peas, rinsed and drained
  • 1 (15 oz) can pinto beans, rinsed and drained
  • 1 (11 oz) can yellow corn, drained
  • 1 cup diced celery
  • 1 bunch cilantro leaves, chopped
  • 1 red bell pepper small diced
  • 1 medium tomato diced
  • 1 small onion small diced
  • 1 (2 oz) jar chopped pimento peppers
  • 1 jalapeno pepper seeded, deveined, and minced
  • 1 tablespoon minced garlic
  • 2 limes juiced
  • 1 (24 Fl oz) bottle Italian dressing

For serving:

  • Chips/crackers

Instructions

  • Combine the black beans, black-eyed peas, corn, celery, cilantro, red bell pepper, tomato, onion, pimento peppers, jalapeno pepper, and garlic in a large bowl.
  • Pour lime juice and Italian dressing over bean mixture and stir until dressing is evenly distributed. Cover and refrigerate for at least 2 hours or overnight.
  • Serve with nut thins, tortilla chips, and/or carrot chips.
