This Week’s Meal Plan (02.22.15)


Here’s the plan. We’re shaking things up!

It’s the Sunday. You know what that means. Meal prep, meal plans, and the grocery shopping hustle and bustle to get ready for the week ahead. The infamous, “What’s for Dinner?” question is always floating around our house. Dinner can be such a scary thing. I mean, the possibilities are endless and the Pinterest possibilities are even more endless. So, we’ve decided to launch a new series, with the intent bring a little less stress to the dinner time rush.

In this series, we’re going to be sharing EASY, yummy recipes from all the different yummy blogs out there, as well as some of our own favorite dinner recipes too. Notice the emphasis on the “easy” recipes. As much as I love to cook, cooking is not what I want to spend my whole night doing after a super long day. Simple, easy dinner recipes are where it’s at.

So get ready, because dinner is about to get 1000x easier and 100000 yummier!

Here’s this week’s meal plan:



Lentil Chili // Meatless Monday never tasted so good! Hearty and chunky lentil chili much healthier than your traditional chili but tastes exactly like your favorite bowl of ground beef chili!



Easy Lemon Chicken // You’ll never guess how quickly this crisp, tender chicken comes together with just a handful of ingredients!

We are serving this with a simple side salad. (Greens, almonds, golden raisins, balsamic dressing)



Creamy Chicken and Asparagus Pasta with Bacon // Like a lighter alfredo pasta with bonus of herbed chicken, fresh asparagus and salty bacon. So good!

Lightened Up Chicken Enchiladas // These look so delicious, so simple, so quick to assemble and SO easily devoured… yeah. They look ah may zing.

With a side a chips and salsa.



Southwest Pepper Jack Salad with Creamy Avocado Salsa Dressing // The dressing alone is worth making this!

Add some grilled chicken for extra protein.

BONUS: Make these hot fudge stuffed chocolate chip cookies this week. Trust me. 😉
