Pecan and pie just go together. Right? OK, then we can move onto how DELICIOUS this granola is!

Thanksgiving is coming a little early this year… Pecan pie takes on granola… and the winner? BOTH. This right is a perfect fusion of both.. the sugar-y, crunchy, sweetness of pecan pie fuzed with the crunchy, oaty texture of granola. It’s like Christmas (I mean… Thanksgiving) in your mouth. 😉

Want to know why this granola is the best? Because it’s SO easy and this is only requires one bowl to mix it all together – my simplest granola yet!

This recipe could just have an ingredients list and no directions because all the ingredients get mixed up in one bowl, no order, just one bowl.

…Well maybe you do need some instructions because then you would just be left with a big bowl of raw granola. So, scratch that.

Reason two why this granola is totally awesome? It pairs perfectly with everything. Spoons, yogurt, bananas, blueberries.. you name it.

Reason three? Lots of clusters! It may not look like it in this picture but….. that may or may not be because I ate them all before this pan got under my camera lens…. oppsies.

But the secret to clusters is to press the granola down as soon as it comes out of the oven and then don’t touch the granola until it is completely cool. Then you’ll be left with big snack-able, pop-able clusters.

The important question: Does this really taste like pecan pie? My answer in short is… Yes. In my opinion it also tastes like a pecan crisp, but who knew that was even a thing. And in a long answer it tastes like…

Vegan Pecan Pie Granola

8 ingredient, one-bowl crispy pecan pie granola sprinkled with sweet pecan pieces and flavored with hints of maple! Simple, fast and seriously satisfying.

Ingredients:

1 cup old-fashioned rolled oats
1 cup quick oats
2/3 cup pure maple syrup
1/4 cup brown sugar
1 cup pecan pieces
2 Tablespoons coconut oil, melted
1 teaspoon cinnamon
1/8 teaspoon salt, you can also use sea salt

Directions:

  1. Preheat oven to 300 degrees. Spray large baking sheet w/ nonstick spray.
  2. Combine all ingredients and stir until all the oats are evenly coated.
  3. Spread onto prepared baking sheet and bake for 20-25 minutes. Remove from oven and press down to form one big granola cluster.
  4. Allow to cool completely (air will help it get crunchy), break into clusters and enjoy!
