Turkey Smash Burgers

Turkey Smash Burgers are just like classic smash burgers.
But they’re made with ground turkey instead of ground beef!

These turkey smash burgers are the perfect smash burgers. It’s a burger that can be made any time of year. And they have so much flavor!!

I use this same burger recipe to make turkey burgers on the grill in the summer. But this is my go-to when I don’t want to fire up the grill. Or when the weather isn’t good.

What keeps turkey burgers from falling apart?

Ground turkey can be a little crumbly. So I use crushed up gluten free pretzels to act as a binder. You could also use panko breadcrumbs.

Use 85% lean ground turkey to make sure you get super juicy burgers

The key making sure the burger to stay together is the meat mixture needs to have enough fat in it.

I like 85% lean ground turkey.

It’s fine to use 99% lean if that’s all you find. Add an extra tablespoon of mayo to add some more fat into the meat mixture!

How do you make a smash burger without a press?

You can still make turkey burgers if you don’t have a press!

The easiest, most foolproof method: cover the bottom of a small saucepan with foil. Spray the foil with non-stick cooking spray. Place the meat ball on the skillet. Then press down on the meat with the bottom of the saucepan.

Use a non-stick skillet for the easiest flipping!

I like to make these on a griddle or a non-stick skillet. This ensures the meat mixture doesn’t stick to the skillet. But you can use a cast iron skillet too.

The perfect size burger patty is 1/4 cup

1/4 cup of meat is the perfect sized burger patties. You can smash them into a layer thin enough to crisp up. But it still stays together.

Turkey Smash Burgers

Just like classic smash burgers. But they’re made with ground turkey instead of ground beef!

Ingredients:

Burgers:

1 pound 85% lean ground turkey (add an extra tablespoon of mayo if you get 99% lean)
1/2 cup shaved parmesan cheese
1/3 cup green onions, thinly sliced (about 1 bunch)
1/4 cup crushed pretzels
1 Tablespoon Yellow Mustard
1 Tablespoon honey
1 Tablespoon mayonnaise
1 teaspoon garlic powder
salt and pepper

Toppings:

American Cheese
Honey mustard
Shredded lettuce or green leaf lettuce
Tomato
Pickled Onions
Pickles (I like dill!)
Brioche buns

Directions:

In a large bowl, combine (with your hands or a spatula) the turkey, cheese, green onions, crushed pretzels, mustard, honey, mayonnaise, garlic, salt, and pepper.

Use a 1/4 cup measuring cup to measure/scoop out burgers into patties.

Preheat a non-stick skillet over medium heat.

If you don’t have a burger press: cover the bottom of a small saucepan with foil. Spray the foil with non-stick cooking spray.

When the skillet is hot, place the meat ball on the skillet. Then press down on the meat with a burger press or the bottom of the saucepan. Get the patty as flat and thin as you can.

Cook about 2 minutes per side. Flip both patties with a metal spatula. Make sure to scrape up the crusty layer that has formed on the burger underneath.

When the burger is almost done, add a slice of cheese on top.

Assemble the burger with 2 patties each, tomato, lettuce, pickles, pickled onions, ketchup, and mustard.
