Sweet Strawberry Almond Salad

A colorful and healthy salad that’s easy to make and simply delicious. Juicy Mandarin oranges, fresh blueberries and strawberries, creamy goat cheese, and crunchy Blue Diamond blueberry-flavored almonds.

Fruit and Nut Summer SaladThere is something about summer that has me craving fresh, flavorful salads like no other time of year.  There is such a bounty of fruits and vegetables readily available during this time and I want to enjoy each and every one.

This particular salad is one of my favorites – especially for summer. The juicy fruits, creamy goat cheese, and crunchy almonds make for one of the most refreshing, flavorful salads EVER.

Almond Summer Salad

Another thing I love about this salad is all the color and textures. The creamy goat cheese complements the crunchy almonds, while the sweet blueberries complement the juicy oranges. I don’t know what it is, but everything in this salad just works together in perfect harmony.

Speaking of almonds, the almonds I use are Blue Diamond Blueberry-flavored almonds. If you haven’t tried them yet, then you are in for a real treat because they are seriously to-die-for.. and dangerously addictive!

You can find the Blueberry almonds in more grocery stores, however if you can’t find the blueberry flavor, you could also use the strawberry or the whole natural almonds.

Fruit and Almond Summer SaladI dress this salad in a homemade apple cider vinaigrette. I have also used a poppy-seed dressing before and that’s great on it too. You could even try a raspberry vinaigrette. I tend to lean more towards sweet dressings when it comes to this salad because of the sweet blueberry almonds and sweet fruits; I feel like a savory dressing would throw the taste off.

Summer Salad Dressing

This fresh, healthy salad is perfect when the temperature start to rise; it’s so refreshing and there’s little work involved. It’s also super flexible. If you have leftover chicken, you could also through that on top, use whatever greens you have on hand, and/or feel free to switch up the berries.

This recipe makes about 4 small side salads or 2 salads big enough to serve as a meal.

If you’re serving this salad up anytime this summer, I would suggest making A LOT. Maybe even doubling or tripling the recipe. Trust me, this salad is an eye-catcher and your guests will be coming back for seconds, guaranteed.

Sweet Strawberry Almond Salad

A colorful and healthy salad that’s easy to make and simply delicious. Juicy Mandarin oranges, fresh blueberries and strawberries, creamy goat cheese, and crunchy Blue Diamond blueberry-flavored almonds.

Ingredients:

For the apple cider vinaigrette:

  • 1 cup olive oil
  • 3/4 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup red onion, chopped
  • 1 teaspoon dry mustard powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the salad:

  • 6 cups spinach or field greens
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 (11 ounce) can mandarin orange slices, drained
  • 1/4 cup Blue Diamond Blueberry almonds (regular almonds are fine)
  • 1/4 cup goat cheese crumbles

Directions:

  1. Add all the dressing ingredients to a blender and blend until smooth. Set aside.
  2. Toss everything together in a large bowl, except for the dressing, until combined. Pour desired amount of dressing overtop and serve immediately.
