Pimento Cheese Deviled Eggs has a classic deviled egg mixture on top of a layer of pimento cheese. They’re creamy & absolutely delicious!
There are regular deviled eggs… And then there are pimento cheese deviled eggs!!!!
My grandma makes deviled eggs for our family holiday gatherings. We love them.
First, she uses dill pickles rather than sweet pickles. It helps cut the sweetness and balances the whole thing out.
Second, she uses onion flakes instead of garlic powder. The onion flakes hydrate as the deviled eggs sit in the fridge. So the onion flakes don’t stay crunchy. They add way more flavor than garlic powder. But nothing too overpowering.
I’ve seen people do pimento cheese deviled eggs. But the often mix the pimento cheese into the egg yolk mixture. So it’s still one stuffing mixture in the egg shells.
But I wanted to keep that creamy texture and the distinct shredded sharp cheddar cheese.
So I layered the two on top of each other instead of mixing the pimento cheese into the egg yolks. And WOW.
I use store-bought pimento cheese. So adding the pimento cheese layer is barely any extra effort. But holy cow does it take deviled eggs to the next level. Of course, you could make your own pimento cheese if you prefer!
But this egg boiler makes the perfect boiled eggs every time. The egg shells peel. The yolks are cooked exactly how you want them to. And there aren’t any fancy tricks. You set it and forget it.
I typically use a fork to combine the egg yolks, mayo, and mustard. But you could use a food processor if you want the mixture super smooth. I would still fold in the pickles and onions because I love the chunks of pickles throughout the deviled eggs. It adds a little crunch to break up all the creaminess.
If you have a piping bag, then you can definitely use it.
But I wouldn’t buy one if you don’t have it already. A plastic bag with a cut on the corner works. That’s what I do!
We actually think these are better the next day. It gives the eggs time to set together and solidify. And the onions really flavor the mixture.
It’s the perfect make ahead appetizer or side for a holiday or party!

7 large hard-boiled and peeled eggs
1/4 cup mayonnaise
1 teaspoon yellow mustard
1 1/2 tablespoons finely chopped dill pickle chips
1/2 teaspoon dried chopped onions
1/2 cup store-bought pimento cheese (or make your own)
dill pickle chips, quartered (for topping)
smoked paprika (for topping)
Peel and halve the eggs lengthwise. Remove yolks and place in a small bowl.
Mash yolks with a fork until very crumbly. Stir in mayonnaise, mustard, pickles, and onion flakes. Add salt and pepper, to taste.
Fill a plastic bag with the egg yolk mixture. Fill a separate plastic bag with the pimento cheese. Cut one of the bottom corner off of each bag.
Fill egg whites evenly with about 1 a teaspoon of the pimento cheese, then 1 teaspoon of the yolk mixture on top of the pimento cheese. Garnish with a pickle and sprinkle with smoked paprika. Store covered in refrigerator overnight or up to 3 days.
