Good morning! And happy Monday! This past weekend my family and I might have given a new meaning to “cabin fever.” The snow these past few weeks has been CRAZY. A couple weeks ago, we were at the turn of the season, thinking our chances of snow days were long gone. Boy if we only knew what was coming… In the past four weeks we haven’t been to school for more than 3 out of the 5 days.
I am always up for a snow day, and I’m never one to complain about snow days. I’m just here to tell you that snow days are just as real as cabin fever, folks. And on Saturday night we had reached our limit.
Let’s just put it this way – my brother was offering to shovel the driveway, and my mom was offering to help. That’s when I knew I needed to take matter into my own hands. It was time for some excitement!
Surprisingly, as long as we had been inside, we hadn’t watched any movies, so of course we all agreed on a family movie night. And… Any excuse we come across to make a yummy treat, we take it. So obviously we had to have something sweet and delicious to go along with our movie night.
Brownies took too long. Cookies weren’t exciting enough. Ice Cream was too cold. And then… we thought of THESE Baked Banana Boats. Ding, ding.. we have a winner!
A banana is sliced down the middle and stuffed to the max with chocolate chip cookie dough, M&M’s® Crispy, and marshmallows, topped with scoops of ice cream, swirls of whipped cream, and sweet cherries.
It. was. glorious. The textures. The flavors. Everything. Perfection.
On top of that, these are actually really easy to make. They are even easier if you a cheat a little buy pre-made cookie dough from the store.

This was my first interaction with M&M’s® Crispy and I don’t know whether I should feel upset because I never knew about these, or be jumping for joy because I can now get them whenever I want.
Including big bags of the M&M’s® Crispy when we make these banana boats again. Or the single serving pouches for whenever I need an afternoon pick-me-up. (If you can’t find the larger bags, you can also grab a few of the 180 calorie/serving individual snack size bags at most checkouts.)

As a food blogger, people tend to think that I am constantly cranking out yummy food like a machine. I am the first one to say that, I am not a baking machine… I love eating out at restaurants or running by CVS for packaged treat… and you betcha these are what I’m going to be getting from now on. M&M’s® Crispy Cookie Dough Baked Banana Boats
For the cookie dough (or use about 1/2 cup pre-made cookie dough):
- 2 Tablespoons butter, softened to room temperature
- 2 Tablespoons brown sugar
- 1 Tablespoon granulated sugar
- 2 Tablespoons beaten egg (crack the egg, beat it, and use 2 tbsp)
- 1/2 tsp vanilla extract
- 1/3 cup all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup chocolate chips
For the Banana Boats:
- 3 Bananas, peeled and halved
- 1/2 cup mini marshmallows
- 1/2 cup M&M’s® Crispy, roughly chopped
- Ice cream
- Whipped Cream
- Preheat oven to 350ºF. Spray a 9-inch pie plate. Set aside.
Make the cookie dough:
- In a medium-sized mixing bowl, stir the butter and sugars together until creamed. Mix in the egg and vanilla. Stir in flour, baking soda, and salt until just combined. Do NOT overmix. Fold in chocolate chips.
To make banana boats:
- Place sliced bananas (center facing up) in prepared pie plate. Top each banana with 2-3 Tablespoons cookie dough, 1 Tablespoon marshmallows, 1 Tablespoon M&M’s® Crispy.
- Bake for 14-16 minutes until the banana are soft, cookie dough and marshmallows are golden brown. It is okay if the cookie dough isn’t fully cooked.
- Remove from oven, top with desired toppings. Serve immediately. Enjoy!
