Mini Peppermint Bark Chocolate Bundt Cakes

THESE cakes are something you MUST put on your holiday baking list this year! When we made these my family demanded that I get them out of the house because they were so good they could stop eating them, and my neighbors who I brought the cakes to texted telling me how absolutely delicious they were and to send them the recipe ASAP!

These are perfect for parties because unlike a large bundt cake, these are perfectly portioned out for all your guests. Aside from parties, these are great for holiday baking trays or just because. 😉

Mini Peppermint Bark Chocolate Bundt Cakes

Incredibly moist, melt-in-your mouth chocolate cake with the smooth peppermint bark coat on top – a peppermint bark lover’s dream!

Ingredients:

For the Cake:

  • 1 package Moist Chocolate Cake Mix
  • 1 package instant chocolate pudding
  • 1 cup sour cream
  • 4 large eggs
  • ½ cup water
  • ½ cup oil
  • 1½ cup mini chocolate chips

For the topping:

  • 8 ounces white baking chocolate
  • 8 ounces dark baking chocolate
  • 1/2 cup peppermints, crushed

Directions:

  1. Preheat oven to 350 degrees. Grease 8-16 (depending on size of mini bundts) mini bundt pan. Set aside
  2. In a standard mixer fitted with the paddle attachment, mix together the cake mix, instant chocolate pudding, sour cream, eggs, water, and oil until just combined. Add the chocolate chips and mix until evenly distributed.
  3. Scoop the batter evenly into the bundt pan. Place into oven and bake for 15-25 minutes, or until a tester inserted in the center comes out clean.
  4. Remove from oven and let cool for 15 minutes before inverting the cake onto a wire rack.
  5. To make the peppermint bark topping, melt white chocolate according to the directions on package and dip the top of each bundt cake into the melted topping. Sprinkle crushed peppermint over the freshly dipped donuts and place on a cooling rack to dry.
  6. Once dry, melt dark chocolate according to package directions and drizzle over tops.
  7. Allow chocolate to set before serving.
