Healthy Pumpkin Chocolate Chip Waffles
These healthy pumpkin waffles are lightly flavored with pumpkin and spices, loaded with chocolate chips and chopped pecans, and drizzled with pure maple syrup.
There’s nothing better than a huge stack of warm, melty waffles dripping in syrup on a Sunday morning – oh wait, yes there is. A HEALTHY stack of warm, melty, pumpkin spiced waffles. Never underestimate the power of an awesome waffle. They have serious healing powers. I heard a quote the other day: “Eat like you love yourself.” I promise you if you feed your body these waffles, your tastebuds will love you and so will your body.
I love pumpkin.
I love chocolate.
I love waffles.

There’s NO sugar or NO oil. What??? Yes. Okay well if you add chocolate chips, then yes, you are going to have sugar, but you could use pecans instead of chocolate chips and the waffles will still be just as delicious.
They have crispy edges and soft, fluffy centers. They just might be my new favorite way to spend weekend mornings. We use a Belgium waffle maker because bigger is always better when it comes to waffles, but a traditional waffle maker will work too.
Homemade waffles are such a comforting treat to make in the mornings and this from-scratch recipe will take you only a few minutes longer than if you were to use a baking mix. And they taste worlds better than a packaged mix, too.
Comforting.
Healthy.
Sugar-free.
Crispy.
Tender.
Soft.
Fluffy.
Perfect.
DELICIOUS.
*If you want to make these ahead of time, they freeze and reheat in the toaster perfectly! (The toaster keeps them crunchy. 😉
Healthy Pumpkin Chocolate Chip Waffles
These healthy pumpkin waffles are lightly flavored with pumpkin and spices, loaded with chocolate chips and chopped pecans, and drizzled with pure maple syrup.

Ingredients:
1 1/2 cups white whole wheat flour
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/8 teaspoon nutmeg
1 cup pumpkin puree
1/4 cup honey
1 egg
1/2 cup nonfat plain Greek yogurt
1/3 cup unsweetened vanilla almond milk
1/2 cup chocolate chips
1/4 cup chopped pecans (optional)
Directions:
- In a medium bowl, whisk together flour, baking soda, cinnamon, and nutmeg. Set aside.
- In a separate bowl, add pumpkin puree, honey, egg, yogurt, almond milk, and whisk.
- Add flour mixture and stir until just combined. Lastly stir in the chocolate chips and/or pecans. Be careful not to over-mix the batter. Let batter rest for 5 minutes while preheating your waffle iron.
- Once preheated, generously spray the waffle iron with non-stick cooking spray and spoon about 1 cup of the batter onto the center of the iron and cook according to your machine’s instructions.
- Once done, remove and place on cooling rack to let steam roll of and crisp up a bit. Serve warm with maple syrup.
Such a detailed and clear recipe. Anyway, can I put 2 eggs instead of 1, because I’m on diet and I want to gain more protein?
no I would not do that……..I would just fry and egg or scramble one and have it as a side with the waffles 🙂

Hi, awesome recipes! Is there any substitute I can make for the white whole wheat flour? Oat flour? Coconut flour? We’re trying to cut out wheat to the extent we can. Thanks!
Yes – all those but keep in mind the coconut flour would change the taste a little…..you can also you cup 4 cup gluten free flour. It’s a great gluten free flour! You can find it at your grocery store or William Sonoma…and I am sure other stores.

honey and maple syrup are sugar though… they look nice but hardly healthy.
