Healthy Living Summit Conference {Part 2}

Hey there! We are back to share part two of our weekend at the Healthy Living Summit.

After our mini mingle we had about an hour and a half until dinner… there was a cocktail party planned for after dinner, so we didn’t want to do anything that would involve us getting sweaty beforehand.

Not wanting to sweat + wanting some fresh air = Time for a walk around Minneapolis!

I definitely underestimated how much I would like Minneapolis… during the little time we had to explore, Minneapolis proved to be a super cute city!

I think it might a little bit too cold for somewhere I was going to live, but for visiting, it was awesome!

Did you know the Target Headquarters is in Minneapolis? And that the Target Headquarters is nicer than all of our house combined?

They had a basketball court, a huge chess game, outside patio tables, couches indoors with fire-pits… and more!

After our walk we came back to the hotel to get ready for our dinner at Spoonriver. Spoonriver uses local and organic ingredients in all of their dishes and they even have a farmer’s market attached to their restaurant on Saturday mornings! We were so bummed we couldn’t make it to the farmer’s market during our stay, but this was definitely our kind of restaurant.

We loved getting to know all of the ladies who joined us for dinner! 🙂

For dinner I got the Mill City Crêpe (Farmer’s Market Vegetables, Wisconsin Chevre Cheese, Fresh Herbs, Arugula Salad, Poached Egg, Seasonal Fruit). I would definitely recommend it… My mom and I were supposed to share both of our dishes but I decided I wanted the whole crepe to myself! Haha! Sorry Mom!

My mom got the Vegetarian Special, which had all sorts of delicious veggies!

After dinner we headed across the street to the Cocktail Party. I didn’t take any pictures because 1) I forgot and 2) even if I did, the lighting was really dark.

We got to meet and talk to so many bloggers… it’s so awesome being able to connect with other people who enjoy doing the same thing you do.

The next morning was the actual conference day. We started the day in our matching “Keep Calm and Blog On” t-shirts. 🙂

For breakfast I had a yogurt parfait from the Wild Harvest booth.

The mini frozen blueberries and vanilla granola were heavenly! It was the perfect start to a full day ahead of me.

We both learned so much while at the conference… everything from working with brands to learning how to not crack under the pressures of blogging.

We love Heather!! 🙂 Heather is one of the HLS organizers. We met her last year and she has been so nice by helping us get out into the blog world.

+ Melanie and Caroline !! 🙂 We met these girls last year as well. It was so fun to catch up with them again this year and chat about how all of our blogs have transformed since the last time we were together.

We probably have enough almonds to live off of for a month and still have some left over to feed an army. My mom and I are obsessed with the Toasted Coconut and Blueberry almond flavors!! So YUMMY!

After a long day and a lot learned, my mom and I went to the melting pot for dinner to de-brief a little bit.

With a glass of wine, of course. I mean, my mom had the glass of wine… I had water. 😉

We only ordered cheese and chocolate because everyone knows those are the best parts, so why waste our time with the other two courses!

For the chocolate we got the Flaming Turtle, which to our surprise actually lit on fire!

In case you were wondering, we literally cleaned the bowl of chocolate clean. We left the restaurant and went back to the room in a severe food coma after having eaten all day long… but hey, what did I expect coming to a food conference?

We didn’t get to stay for the 5K and goodbye breakfast on Sunday morning because we had to leave for the airport. 🙁 But we did manage to get a delicious breakfast sandwich to-go!

The Healthy Living Summit was yet again another amazing experience.. We met so many new bloggers, learned tips on blogging, got ideas for blogging, and so much more.

I’m so glad we got to be apart of another year at the Healthy Living Summit!
