Easter Cupcakes – absolutely delicious and so easy. They uses a boxed cake mix. So it’s perfect for making with kids!
Why decorate eggs when you could make cupcakes for Easter?! At the end of craft time together wouldn’t you rather eat a cupcake than an egg? I know I would!!

If you are making these with kids, you can make it even easier by prepping the cupcakes ahead of time. Then when you’re ready – you can frost, coat with chocolate shavings, and top with an Easter egg!
You can also make the whole cupcake the day before. Then serve when you’re ready to eat!
Make a ham. Plus this hashbrown casserole. With this asparagus. And spring cobb salad. Finished with some carrot cake or these cupcakes for dessert. YUM.

1 box Pillsbury Cake Mix – chocolate (plus ingredients for making batter)
1 Pillsbury Frosting – chocolate
Dark Chocolate (shaved)
Blue coated candy (you can find these at just about any grocery store – get multi-colored if you can’t find blue)
Bake cupcakes according to instructions.
Spoon on plenty of icing ( I like a lot!)
Top with shaved chocolate and a blue candy coated chocolate egg.
Enjoy and don’t forget to save one for the Easter Bunny.
