Best Tomato Caprese Salad

We had lots of Caprese salads in Greece on our recent vacation which has left us missing and craving them this last week! When we paired our love for the Caprese salad with our favorite balsamic dressing we created a fabulous recipe that we couldn’t wait to share! I always hear that you eat with your eyes…..well, this salad as you can see will steal the show at your next barbecue or dinner!
This is such a quick meal or addition to your favorite meal. And because it’s so quick and easy it’s great for weeknights too! SCORE! You can even make the dressing the day before if you want to save time. Lately I have been making this dressing so much that I always have some on-hand!
So, get your tomatoes and start slicing – you will love it. Greece made a tomato lover out of me and this salad did not disappoint!
Arugula is key to a great Caprese salad! You don’t see that a lot in the States but you do in Greece. It is really nice to have some greens to accompany the tomatoes, fresh mozzarella and basil! And…..it really makes the serving dish look pretty!

Best Tomato Caprese Salad
Our addition of Arugula and our own balsamic vinegar dressing recipe is what makes this salad special and stand apart from the rest! We love fresh, healthy, DELICIOUS, clean eating recipes….this salad tastes as good as it looks!

Ingredients:
- 4 Red Tomatoes
- 4 Yellow Tomatoes
- 2 Bunches of Basil (about to large handfuls
- Fresh Mozzarella Cheese (I used two packages here)
- Arugula
Balsamic Vinegar Dressing:
- ½ cup Vegetable Oil
- ⅓ cup Sugar
- 3 Tablespoons Balsamic Vinegar (We used a sweet aged Williams Sonoma Vinegar)
- 2 Tablespoons Water
- ⅛ teaspoon Dry Mustard
- ⅛ teaspoon Ground Pepper
Directions:
- Cover your serving plate with Arugula. Slice the tomatoes about a 1/4 of an inch thick. Wash and chop the basil. Layer the salad by alternating the tomatoes and the fresh mozzarella cheese on your platter. Generously top with the chopped basil.
- To make the dressing: whisk together all dressing ingredients. Drizzle dressing over salad when ready to serve and ENJOY!
