Deconstructed Stuffed Peppers – quick and easy one-pot skillet dinner made with only 8-ingredients in 15 minutes. Tastes just like a stuffed pepper without all the work!
I love stuffed peppers but they take so long to put together. And the peppers never get cooked all the way through when I make it. Enter: this deconstructed stuffed pepper skillet. All the flavor without all the effort and made in a skillet:
Hearty ground beef
Caramelized onions
Comforting tomato flavors
And so much cheese! (plus the peppers!).
I love using frozen store-bought rice! Trader Joe’s has great steamed bags of frozen rice. It makes the rice cooking time just 3 minutes in the microwave.
If you don’t have a Trade Joe’s near you, I have also seen frozen brown rice in the organic section of my local grocery store and at Whole Foods. If you can’t find the rice, you can always start with the rice and let it cook while you make the skillet because the rice is that last thing to go in.
You could honestly serve this on it’s own since it has meat, rice, and vegetables in the skillet! But you if you are looking to bulk up the meal…
Steamed green beans sauteed with some butter, lemon, and garlic would be a delicious and easy side.
Or this lemon parmesan asparagus. Or this lemon parmesan kale salad!
Frozen sweet potato fries or potato wedges would also be great!
You could also add some cauliflower rice to the skillet to add some extra vegetables in there!
Portion the cooked mixture into your desired serving size in airtight containers. Transfer to the freezer. When ready to eat, thaw in the fridge or briefly under warm water to help loosen it from the containers. From there you can also reheat on the stove! Or you can reheat from frozen in the microwave.
