The Perfect Summer Picnic.

 Summer is officially in full swing and we just can’t get enough of the warm weather, after-dinner walks, Saturday morning Farmer’s Market visits, fresh vegetables, care-free days, and dinners from the grill!

But most of all, our favorite summer activity so far has been Saturday morning yoga classes held on the rooftop of the Virginia Museum of Fine Arts (Sponsored by Project Yoga Richmond) followed by a picnic at nearby park to help us refuel. I can’t imagine a better way to spend a Saturday morning, or any morning for that matter! Last week there was more than 280 yogis there! Crazy, right?!  The energy that 280 people bring together is amazing.

They all just finished their 200-hour yoga teacher-training!! She is officially a real yoga teacher now. 🙂

Sweet Strawberry Almond Salad.

We always take advantage of fresh produce in the summer by incorporating it into every single meal! So you betcha we always pack a delicious salad to take along with us. This salad is loaded with all the good stuff: fresh strawberries, blueberries, Mandarin oranges, goat cheese, and Blue Diamond Blueberry-flavored almonds over a bed of spinach and drizzled with an apple cider vinaigrette. Yum!!

We pack the salads in Mason jars and the dressing on the side to make one awesome and portable salad. No mess! Just pack, mix, dress, eat! And when you’re finished, clean up gets as hard as screwing the lid back on.

Coconut Almond Macaroons.

Not only are they coconut macaroons, but they are topped with Blue Diamond Coconut Almonds and drizzled with melted chocolate. So so good. I used my favorite coconut macaroon recipe for the base, pressed an almonds in the top before baking and drizzled them with chocolate when they came out of the oven!

These Coconut Almond Macaroons taste like the best Almond Joy EVER. Let’s be honest, the coconut part is the best part of an Almond Joy anyway, so why not double the filling… Next big thing: double-stuffed Almond Joys?!
