Spicy Chicken MarinadeHello Sweet Summertime! We’ve been grilling like crazy around here… everything from chicken to steak to veggies to fish, we just can’t get enough grilled meals. And when we aren’t grilling our vegetables were making these!

Recently, we’ve been cooking a lot of chicken and our go-to chicken marinade (Italian dressing) was getting a little boring… enter: Spicy Buffalo Lime Chicken Marinade.

Kickin Chicken Marinade

There’s only 4 ingredients required: Frank’s Red Hot sauce, lime juice, minced garlic, and olive oil.

It’s so so easy; and it’s packed with flavor. There’s a little bit of kick to the chicken, but it’s not overpowering in the slightest. It’s just enough to add some heat, while still letting the zesty lime juice shine through.

(If you are serving this to kids, then you could half the hot sauce amount and keep all the other ingredients the same.)

Spicy MarinadeWhen my little brother tried the chicken fresh off the grill the other night, he said “Woah! This tastes like something from Buffalo Wing Wings!” … I can’t validate that statement since I’ve never eaten at Buffalo Wild Wings before, but I took it as a complement since he is obsessed with that place (he’s a foodie just like us!).

Did I really just say that I’ve never eaten at B-Dubs before? Yes, I did…. you see, my dad and brother normally go there while my mom and I go get sushi. I don’t think I need to explain why I choose a fun and healthy sushi date over a loud and messy B-Dubs outing, do I? ๐Ÿ˜‰

But from what I gathered is that this chicken has all the flavor without the heavy, greasy breaded coating. Could this marinade be the healthy alternative to Buffalo Wild Wings??? It’s so good, that it just might be!!

Spicy ChickenWe normally use chicken tenderloins because they are quicker and easier to cook, serve, and keep for leftovers; but you could do this with any style chicken you’d like: chicken breasts, kabobs, drumsticks, or you could even try a whole roasted chicken this way. (<— let me know if you do a whole roasted chicken, I’d love to hear how that turns out!)

This chicken marinade is perfect for summer cookouts, dinner parties, family gatherings, and everything in between!

Spicy Buffalo Lime Chicken Marinade

Charred-tender chicken marinated in a simple, zesty, buffalo dressing. The marinade has the perfect amount of spice combined with the perfect amount of zest; this will quickly become your family’s new favorite chicken marinade!

Ingredients:

2-3 lbs of chicken (breast, thighs, drumsticks, wings ~ bone-in or boneless)
1/2 cup Frank’s RedHot Original
1/4 cup olive oil
1/4 Cup lime juice
2 cloves of garlic, minced (about 1 teaspoon if you are using it from a jar)
Lime – cut into slices, for serving

Directions:

  1. In a medium bowl, whisk Frank’s RedHot Original, lime juice, olive oil, and garlic until combined.
  2. Place chicken in a large Ziploc bag and pour in marinade; refrigerate for 2-4 hours.
  3. Remove the chicken from the bag and place on the grill over medium-high heat. Grill for about 4 minutes on each side. Squeeze fresh lime juice over top and serve immediately.
