Homemade Ice Cream Sandwich! Two chocolate chip cookies. A Nutella schmear on each side of the cookie. And a huge scoop of vanilla ice cream sandwiched in between. YUM!

This steak and these fries would also be a perfect pair to go with this dessert.

I love using these cookies for the ice cream sandwiches. Nutella is my choice of chocolate. But you could also use hot fudge sundae sauce.

I liked them best when I ate them right after making. The hazelnut butter hardens when left in the fridge.

But you can definitely make these ahead of time. Just set aside some time to let them thaw out.

  • Spread each cookie with nutella.
  • Take one side of the cookie and top with a scoop of ice cream.
  • Top with cookie the other cookie, chocolate hazelnut butter side facing down and gently push together to adhere.
  • Repeat with the however many cookie sandwiches you want to make. Place each finished cookie sandwich in the freezer as you work. Eat immediately or freeze, wrapped tightly in plastic wrap, until ready to serve.
  • Nutella does get hard in the freezer. So either eat them right away or remove them from the freezer about 5 minutes before eating.
