Red Velvet White Chocolate Popcorn

10-minute, 3-ingredient, popcorn coated in a a layer of white chocolate and then red velvet crumbs. This is the perfect treat or snack for any occasion – Valentine’s Day, a girl’s night in, movie night, or just because!

Valentine’s Day is right around the corner, so you better be ready for all the sappy cards, chocolate overload, and rom-com marathons. Single ladies, can I get an ohhh yeahh!! Valentine’s Day is one of my favorite holidays. I love a reason to celebrate/have friends over. And I LOVE a pre-excused opportunity to stuff my face with chocolate, chocolate, and now this popcorn.

My love for Valentine’s Day could also have something to do with the fact that me and rom coms are BFF’s. Speaking of romantic movies, have any of you seen All Of Me??? Talk about a sad movie. It almost puts the notebook to shame. Almost. Definitely one of the best movies I have seen in a long time.

Anyways, back to the popcorn, this recipe is one of those “so easy it’s almost not a recipe.” But it is because anything this yummy deserves a recipes to go with it. If you give were friends this popcorn, they are sure to ask for a recipe to go with it. (Name that childhood book?)

It only takes 3 glorious ingredients to make this popcorn –

1. Popcorn. Duh. I buy the sea salt air popped bags of popcorn in the organic section of my grocery store.

2. White Chocolate. For melting. Make sure you use melting/baker’s chocolate, there’s a difference between chocolate chips and melting chocolate. Chocolate chips have a bunch of stuff added to them to help them hold their shape, thus resulting in a clumpy, gross kind of melted chocolate.

3. Red Velvet Muffins. What?! Yeah, I know, but really! I bought a 2-pack of red velvet muffins from the bakery section at my local grocery store and they worked perfectly. The thing is, you don’t need a lot of red velvet crumbs to coat the popcorn, so only a few muffins/cupcakes are needed to coat all the popcorn. If you use cupcakes, don’t crumble the frosting with the rest of the cake, or you will end up with pre-cake balls and not crumbs. As another alternative, you could also make a batch of red velvet muffins/cupcakes and use 2-3 of those instead.

This is seriously some of the best popcorn I have ever made. It almost tastes like cake batter popcorn on steroids because the cake crumbs make it soooo much better.

Butter, crunchy, rich, addicting, sweet, quick, easy, and perfect.

Red Velvet White Chocolate Popcorn

10-minute, 3-ingredient, popcorn coated in a a layer of white chocolate and then red velvet crumbs. This is the perfect treat or snack for any occasion – Valentine’s Day, a girl’s night in, movie night, or just because!

Ingredients:

7 cups air popped popcorn (pre-popped from a bag is fine)
16 oz white melting chocolate
2 cups red velvet crumbs (about 2-3 muffins/cupcakes)

Directions:

  1. Add popcorn to a large bowl. Melt the chocolate according to package instructions. Once melted, pour chocolate over popcorn and fold to coat popcorn evenly. Add red velvet to bowl and stir until crumbs are evenly distributed.
  2. Transfer popcorn to a baking sheet lined with parchment paper and let cool until chocolate has set.
