Prosciutto Melon Goat Cheese Salad with Balsamic Dressing

A simple, fresh salad packed with thin sliced prosciutto, bold basil, creamy goat cheese, refreshing honeydew melon, crisp grapes, and a light balsamic dressing.

Our favorite restaurant in Greece was this place called Argo… and it may have been our favorite because of this salad. I was the first thing brought to our table and after one bite I knew we would be in for a treat.

I don’t normally choose honeydew melon, but pair with the salty prosciutto it’s perfect. The salad at Argo didn’t actually have grapes, but I added them for good measure… or maybe just because I’m obsessed with grapes in my salads. I love the crisp, cool factor they add.

I dressed this salad with some of Newman Own’s Lite Balsamic dressing.

Can we just talk about Newman’s Own dressing for a quick sec? Okay, good. I’m obsessed. Like on those weeknights when you don’t feel like making dinner so you dump all thing vegetable in a bowl and call it a salad… yeah, their dressings have been my savior.

On October 21, 2015, Newman’s Own will announce the $35,000 grand prize winner and charity, as well as nine runners-up, who will each have $1,000 donates to a charity of their choice.

Prosciutto Melon Goat Cheese Salad with Balsamic Dressing

A simple, fresh salad packed with thin sliced prosciutto, bold basil, creamy goat cheese, refreshing honeydew melon, crisp grapes, and a light balsamic dressing.

Ingredients:

3 cups fresh basil
3 cups red leaf lettuce
1/4 cup goat cheese crumbles
2 cups fresh honeydew melon
1 cup red grapes, halved
4 ounces thinly sliced prosciutto
Newman’s Own Lite Balsamic Dressing

Directions:

In a large salad bowl, combine the basil, lettuce and goat cheese. Add melon, grapes, and prosciutto. Serve with the balsamic dressing. Enjoy!
