It’s time for another version of easy dinner deliciousness.

One quick thing: I live for delicious AND easy dinners. As much as I love to cook and bake, the dinner rush is just not my thing. It’s so overwhelming! But this chicken dish… it comes together in about 10 minutes, with only one dirty dish (the one it’s baked in).

Flavor flavor flavor. Easy easy easy. Quick quick quick. Those three things… they like the triple threat of cooking, I tell you.

Dinner angels. They are singing over this chicken right now.

The key for this chicken dish is flavor-packed ingredients. In fact, that’s the key for all my easy recipes – because with flavorful ingredients, only a few ingredients are needed. And this version includes tender chicken, flavor-packed pepperonis, melty mozzarella, banana peppers, red bell peppers, baby spinach, a sun-dried tomato dressing, and fresh basil.

This dinner is SO delicious.  I seriously have no interest in messing around with dinners unless they are DAAAAAANG good, and this one passes all my tests for the yum factor. And on top of that, you really don’t need a side because a layer of spinach on the bottom of pan gets baked with the chicken… serving as a perfect vacuum to slurp up all the yummy flavors of the chicken.

The pepperonis in this dish were seriously killer… they have so much flavor and add the exact extra kick of flavor this dish needed.

This is perfect for a weeknight dinner because it’s quick easy, but it could totally be served for a dinner party. There’ so much color and flavor, no one would ever know it’s only took you about 10 minutes of hand-on time and 30 minutes in the oven. 😉

Ahhhh… I can’t wait for the snow to leave, so we have a meal like this on our back porch!

Pepperoni Supreme Baked Chicken

A hearty, healthy dinner recipe with tender chicken, flavor-packed pepperonis, melty mozzarella, banana peppers, red bell peppers, baby spinach, a sun-dried tomato dressing, and fresh basil. The perfect quick and easy dinner!

Ingredients:

10 ounce bag of baby spinach
3 Tbsp chicken broth
4 boneless, skinless chicken breast (thinly sliced or pounded with a mallet to be 1/2-inch thick)
salt and pepper
garlic powder
onion powder
Italian seasoning
1 (8 oz) ball fresh mozzarella, shredded
1 red bell pepper, thinly sliced
1/2 cup banana peppers, sliced
12 pepperonis (such as Hormel brand)
2 Tablespoons sun-dried tomato pesto
4 Tablespoons red wine vinegar
Fresh basil, chopped

Directions:

  1. Preheat oven to 360 degrees.
  2. Place the spinach in the bottom of a 9 x 13 glass baking pan. Drizzle over the chicken broth and season the top with salt, pepper, and Italian seasoning.
  3. Arrange the chicken over the spinach and season very well with the salt, pepper, garlic powder, onion powder and Italian seasoning.
  4. Top chicken with mozzarella, bell peppers, banana peppers, and pepperonis.
  5. In a small bowl, combine pesto and vinegar. Drizzle over chicken.
  6. Take a piece of foil and loosely tent it over the top of the pan. Do not seal the edges of the foil to the pan. Bake for 15 minutes, remove the foil and continue to bake for another 20-25 minutes, or until the chicken is cooked through.
  7. Serve immediately.
