 This recipe takes one of our classic family favorites up a notch.  Adding butterscotch to our favorite oatmeal cookie recipe is a perfect combination of sweetness, crunchy edges and soft center.

We added a surprise to our family favorite oatmeal cookie recipe today and absolutely loved it.  I woke up craving warm oatmeal cookies and a tall glass of cold milk.  I decided to try something different with them to make the special and I have to say that these are a win because I like them much better with the butterscotch.

This recipe gives you a crunchy outside and soft center – sounds perfect right?  I was trying to think of some treats to make for book club…..and this will be a great one.  Everyone loves oatmeal cookies…this recipe makes them feel gourmet and special – which is how I want all my friends to feel when they come over <3

Oatmeal Butterscotch Chip Cookies

This recipe takes one of our classic family favorites up a notch.  Adding butterscotch to our favorite oatmeal cookie recipe is a perfect combination of sweetness, crunchy edges and soft center.

Ingredients:

1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup softened butter (unsalted)
1 cup light brown sugar (packed firmly)
1 egg
1/2 cup sugar
3 cups old fashioned oats
1 cup butterscotch chips

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine flour , salt and baking soda. Mix thoroughly and set aside.
  3. In a separate bowl combine butter and sugars – mixing well with a hand mixer. Mix for 5-6 minutes.
  4. Add the egg and vanilla – mix well.
  5. Stir in oats and butterscotch chips.
  6. Using a cookie scooper place cookies on a parchment lined cookie sheet and bake for 17-20 minutes.
  7. Place cookies on a cooling rack and enjoy!
