Honey Cinnamon Almond Pretzel Granola

Hello pretzels and Blue Diamond Cinnamon Almonds… meet, granola!!

Yes. Granola with pretzels in it. Don’t worry, my family thought I was crazy too BEFORE they tried this sweet and salty, crunchy, flavor-packed, baked goodness.

It’s a delicious combination of oats, Blue diamond cinnamon almonds, and pretzels coated with coconut oil + honey + brown sugar + cinnamon + vanilla  and baked to crunchy cluster perfection. It makes our house smell like cinnamon-vanilla heaven.

The name for this granola is a little bit crazy, but trust me when I say… that is the toned down version. There is just so much going on in this granola. We’ve got Blue Diamond Honey Cinnamon Almonds, PRETZELS, coconut oil, an extra shot of vanilla flavor, brown sugar, and an extra dose of cinnamon. Writing this post is making me wish I still had some left. My family gobbled it all up in 2 days flat!! We put it on everything… strawberry yogurt for breakfast, handfuls for an afternoon snack, sprinkled on crepes when we had breakfast for dinner one night, you name, we put this granola on it.

We all know those granola coated pretzel bites are the BEST. The pretzels are my favorite part of this granola – I can’t believe I have never thought to do this!! Now, I don’t think I will ever be able to make granola without pretzels – they get this insanely delicious coat of cinnamon sugar/granola in the oven. I’m obsessed.

…. and I may or may not have picked out every single one after this “photo-shoot.” 😉 😉 😉

If you can’t tell from my love for the “granola coated pretzels,” I love granola clusters. To me, that is the ultimate 4pm snack. Sweet, salty, crunchy, perfection. Totally kicks an sugar donut craving to the curb. But that is one of the main reasons I have come up with a technique to get the most clusters out of each batch of granola. Want to know my secret???

It’s really not that complicated… all you do is press the granola as soon as it comes out of the oven so that it cools in one big cluster… then you can break that rectangle of granola into as big or as little clusters as you like.

On a side note, have you tried the Blue Diamond Honey Cinnamon Almonds yet?? If not, you HAVE to!! They are sooooo flavorful and insanely delicious. They give this granola so much incredible cinnamon flavor.

Other than putting these almonds in granola (which you should too!!!)… I love them so much, these have replaced my dessert at night.

Honey Cinnamon Almond Pretzel Granola

Sweet, salty, sticky, crunchy granola, bursting with cinnamon/vanilla flavor and lots of fun texture. Some of the BEST granola I have ever tasted!

Ingredients:

2 1/2 cups old-fashioned oats
2 cups pretzels
1/2 cup Blue Diamond Honey Cinnamon almonds, roughly chopped
1/2 cup (packed) golden brown sugar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/3 cup coconut oil
1/4 cup honey
2 tablespoons sugar
1 1/2 Tablespoons vanilla extract (Yes, Tablespoon)

Directions:

  1. Line a large baking sheet with parchment paper and preheat oven to 300 degrees.
  2. In a large bowl, toss together oats, pretzels, almonds, brown sugar, salt, and cinnamon. Set aside.
  3. Combine oil, honey, and sugar in small saucepan; bring to simmer over medium heat. Remove from heat and stir in vanilla.
  4. Pour liquid over oat mixture and use to a wooden spoon to evenly coat oat mixture. Make sure all of the oat are moistened – use your hands if necessary.
  5. Spread onto prepared baking sheet and bake for 30 minutes, stirring every 10 minutes. Remove from oven and use the back of wooden spatula to press down on granola to form on large granola clump. (This will give you big granola clusters after it cools!!)
  6. Let granola cool completely – the air will help the granola obtain a crunchy texture. After completely cool, break up granola and store in an air-tight container at room temperature for up to 3 weeks.
