Happy {almost} February! A place where New Year’s Resolutions cease to exist and our focus is turned to all things chocolate. And let me just warn you, that is what this month is alllll about. Chocolate on chocolate on chocolate. Not only that, but it’s almost time for the Super Bowl, which in case you didn’t know is the day American’s consume the most calories all year… including Thanksgiving. Yep. Goodbye New Year’s Resolutions. It was good knowing you.

Now that the unofficial start of all thing decadent is officially here, I figured I’d make a super cute football party treat: Football Brownies. But not only brownies. Football brownie ice cream sandwich. Dipped in chocolate and decorated like a football with icing. Now this is a sandwich I can definitely get on board with.

Football Sunday’s around here are all about spending time with friends and family. It’s normally a smorgasboard potluck of all things decadent, but every once in a while we just invite a few friends over and have lighter appetizers to save room for a homerun dessert.

That’s right, all the girls get in the kitchen, listen to some fun tunes, (adults) drink wine, eat cheese and crackers, and bake together while the boys actually pay attention to the game. It is seriously one of my favorite ways to spend a Sunday afternoon… who would have thought a girl like me would look forward to a day full of football?

However, there are some things to remember… sometimes there can get to be too many cooks in the kitchen, so that is why it is important to keep the baking simple and use shortcuts when possible. We always keep boxed brownie mixes on hand because in my opinion, nothing beats a boxed brownie. (Sorry! Just my humble opinion 😉 )

And they were a huge hit! All the boys went crazy, too and actually ventured into the kitchen for once instead of staying glued to the television… I would consider that a win on its own.

These are perfect for any occasion… just switch out the cookie cutter and you have got a super fun dessert for all occasions.

Chocolate Covered Football Brownie Ice Cream Sandwiches

Ultra creamy vanilla bean ice cream sandwiched between two fudgy ‘n chewy brownies and dipped in melted chocolate to make the ultimate football treat.

Ingredients:

1 box brownie mix (such as Pillsbury and all ingredients that go with it)
1 quart vanilla ice cream, slightly softened
Vanilla Icing (such as Pillsbury)

Directions:

  1. Heat oven to 350°F. Line 18×13-inch sheet pan with foil so foil extends about 2 inches over sides of pan. Spray foil with cooking spray. Make brownies as directed on box for 13×9-inch pan, or until a toothpick comes out clean. (The baking time could be shorter since the pan is larger than a 13×9-inch pan.) Cool completely, about 1 hour.
  2. Place pan of brownies in freezer 30 minutes. Remove brownies from pan by lifting foil; peel foil from sides of brownies. Cut footballs out of the brownies using a football shaped cooked cutter or a knife.
  3. For each sandwich, spoon 1/4 cup ice cream on bottom of 1 brownie square. Top with second brownie square, bottom side down; gently press together. Transfer the icing to a small bag and cut a hole in the tip. Pipe out the lines for a football; place in shallow pan. Freeze until firm, about 30 minutes.
  4. Wrap each frozen sandwich in plastic wrap. Store in freezer.
