Farmers Market Vegetable Hash

We recently went to Malibu for Spring Break and we had the most amazing breakfast at a restaurant called “Plate – Earthy California Cuisine”.  We were literally savoring every. single. bite.  We knew we had to come home and recreate this breakfast!  This is our favorite breakfast lately!

One of the best things about this dish besides it being really HEALTHY???   It makes GREAT leftovers – You can make extra and eat it the next few mornings!    And this is coming from someone that hardly ever eats leftovers.  To make it feel a little less leftover we make extra veggies but do fresh fried eggs each morning.  Trust me – You will never know that it is leftover.  Sometimes I just throw it in a container and take it to work with me.  Not quite the same as sitting in Malibu …..looking at the ocean but it’s close 🙂

Pairing this dish with roasted potatoes and a side of fruit makes it extra special.  Who doesn’t like roasted potatoes with their breakfast?!

Farmers Market Vegetable Hash

Two fried eggs sitting on top of our favorite Farmers market chopped vegetables, Mediterranean spices and cilantro come together to bring you the freshest, healthiest, most amazing breakfast EVER!

Ingredients:

2 Green Bell Peppers
2 Red Bell Peppers
2 Orange Bell Peppers
1 White Onion
1 Handful of Portabella Mushrooms
1 Quart of Cherry Tomatoes
4 Cups of Uncooked Spinach
2 Tablespoons of Mediterranean Spice (You can find this at just about any grocery store)
Fresh Basil for Garnish
6 Eggs
Salt and Pepper to taste

Directions:

Dice all vegetables (except the spinach). It is really important to get the vegetables diced really small. That was part of what we loved most about this recipe and what creates the “hash” feel.
Place all diced vegetables (except for the spinach) in a pan with some EVOO and your spices.
Cook thoroughly ….but be sure not to over cook your vegetables! You want them to have a slight crunch feel to them so they keep their freshness and vitamins locked in.
In a separate pan cook the spinach. As soon as the spinach begins to turn bright green remove it from the heat. Again, be careful not to overcook the spinach. It only take a couple of minutes!
Fry 2 eggs per serving and place on top of the Hash. You can decide for yourself how long to fry the eggs…..I like mine medium.
Salt and Pepper both to your liking.
Garnish with fresh basil and serve with a side of roasted potatoes and fruit. Enjoy!
