How to Make Homemade Caramel Popcorn in the Microwave?

You combine all of the caramel ingredients in a saucepan. But you don’t have to bring it to a certain temperature. Or making actual caramel at this point.

Then pour the caramel sauce over the popcorn. Microwave a few times. Tossing the popcorn in between each microwave session. You lay out the popcorn on a baking sheet to cool. And that’s it!

Easy Homemade Microwave Caramel Popcorn

Ingredients

  • 10 cups air-popped popcorn (I use a store-bought bag of popcorn like lightly salted SmartFood)

For the caramel:

  • 1 cup butter
  • 1 cup light brown sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

Instructions

  • Add popcorn to a large microwave-safe bowl. Set aside.
  • In a medium saucepan, melt the butter over medium heat. Add brown sugar. Whisk constantly until fully combined and boiling. Remove from heat.
  • Whisk in corn syrup, vanilla, and baking soda.
  • Pour over popcorn. Fold with a rubber spatula to evenly coat.
  • Microwave the popcorn for 1 minute. Remove from microwave and stir. Repeat 3 more times.
  • Spread snack mix into a single layer onto a large baking sheet lined with foil. Allow to cool on the pan. Break apart large clusters if desired.
  • Cover the snack mix tightly once cooled.
