Caramel Apple Bundt Cake

caramel-apple-bundt-cake-2 I love fall flavors…..pumpkin spiced lattes, apple cider, pumpkin bread, apple pie…the list could go on and on.  I added some cardamom spice in this cake – I read somewhere that cardamom is an exotic and sexy spice……all I know is that it tastes great 🙂

One of my favorite fall activities to do is to go apple picking at Carter’s Mountain in Charlottesville.  What do you do after you go apple picking?…..you bake lots of yummy recipes.

I am sure you have apple orchards near you that you could visit and pick some wonderfully ripe granny smith apples…..if you don’t, buy some at your grocery store because you really need to make this cake.

Caramel Apple Bundt Cake

There is nothing that goes with apples quite like caramel….this bundt cake showcases that pairing so fabulously. Grab some apple cider and have a seat at our table because this bundt cake is a combination of all the fall flavors you love.

Ingredients:

  • 1 1/2 cup white sugar
  • 1/2 cup brown sugar (light or dark)
  • 1 1/2 cup vegetable oil
  • 3 teaspoons vanilla
  • 3 eggs, room temperature
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cardamom
  • 2 teaspoon ground cinnamon
  • 3 cups Granny Smith apples, peeled and diced
  • 1/2 cup caramel morsels
  • 1 cup pecans (optional)

Icing

  • 1 cup dark brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/2 cup powdered sugar, sifted
  • 1 teaspoon vanilla

Directions:

  1. Preheat your oven to 325 degrees. Grease and flour a ten inch bundt pan and set it aside.
  2. In a large bowl mix together sugar, oil, vanilla, and eggs until thoroughly mixed and creamy.
  3. In a separate bowl, mix dry ingredients together. Once mixed slowly add dry ingredients to sugar/egg mixture and blend well.
  4. Fold in chopped apples, caramel morsels and nuts (optional).
  5. Fill greased and floured bundt pan with mixture and tap firmly to ensure that you don’t have any air bubbles. Bake until golden brown, about an hour. After it’s done, let it cool in the pan for 15 minutes and then remove from pan and let cool on a wire rack.
  6. While it’s cooling, make your icing. Mix icing ingredients together in a sauce pan and bring to a simmer. Whisk steadily until mixture thickens a bit. For me, that took around 15 minutes, and it was still quite thin. Don’t worry, it will thicken more after you remove it from the heat.
  7. Drizzle over cake, slice and serve
